Tips on keeping un-finished cheese block to avoid molding...
1) ready dry clean knife, carefully open the cheese packaging
2) cut the cheese block into 4/6/8 pcs
3) use cling wrap to hold one of the cheese carefully, avoid hand direct contact the cheese
4) cheese block on hand over the cling wrap
5) wrap the cheese block closely
6) repeat the same with the remaining cheese block, then put them in a zip lock bag
Ready to keep the cheese block in fridge (some articles said if put in freezer might change the taste of the cheese, I tried but it didn't change much). Whenever need to use it, just take out one small block and use it!

如何保存用不完奶酪塊,以避免容易發霉。
1 )準備乾淨的刀,無水無油。然後小心地打開奶酪的包裝袋,手盡量不要觸碰到奶酪。
2 )把奶酪塊切成小等塊(例如:4/6/8小塊)
3 )用保鮮膜小心把每小塊的奶酪包起來,避免用手觸摸到奶酪。
4 )最後把它們放在一個拉鍊封密包裝袋,收在冰箱裡就可以了。 (有些文章說,如果放在冷凍庫裡,可能會改變奶酪的味道,我試過了,沒有太大的改變。) 。每次需要使用它,就掏出一個小小的方塊,方便又容易哦!
