08/02/2015 weekend cooking & tips of peeling corn


Happy Weekend dear all..
Outing again today.. hehe..
Share again peeling the sweet corn and keeping for future uses. I know some mummies using a corn peeler to peel with faster way, but I still prefer this method personally as it is lesser wastage and the corns mostly in complete whole piece which the juice still keeping nicely. Losing of nutrition might be reduced hopefully.

Breakfast : baked potato cheese balls (9 mo lo without teeth is okay to eat)
Lunch: macaroni in cheese sauce (not in the photo ) & chicken nuggets

Baked potato cheese balls (9 mo lo without teeth is okay to eat)
Ingredient :
1 potato
1 tbsp potato starch 
10g grated cheddar cheese 
5g unsalted butter

Steps:
1) remove skin and slice the potato, steam for 10 mins
2) mash the potato with a fork and add in butter and mix well
3) add in potato starch and cheese, mix well
4) a soft and non sticky shall have formed
5) take about 1 tsp dough and roll it into balls
6) place balls on non stick baking sheet and bake at preheat oven of 180'C for 20 mins or light golden brown



Chicken nuggets 
Ingredient :
1/4 pcs Chicken breast
1/4 pcs Tofu
2 pcs Asparagus 
1/2 cooked mashed Potato
1 tbsp Rolled oat
dash of Salt and pepper


Tips of Peeling Corn
Steps :
1) use a knife or chopstick to Remove 1 row of the corn
2) after 1 row is cleared, just use thumb to push the corn row towards the empty row side, and the corns will be easily removed from the kernel 
3) scoop 3 tbsp of corns into a small plastic bag 
4) staple or seal the plastic bag 
5) place all bags into a zip lock bag and zip to close 
6) keep in freezer and take one bag for next use easily
