Good morning & Happy Friday dear all mummies~
Sweet potato is one of the top 10 good food in detoxing and full of vitamins i.e. Vitamin B6, C, D, Iron, Magnesium, Potassium, etc. It is naturally sweet-tasting but the natural sugars are slowly released into our bloodstream. There are many ways you can cook it, roasted, pureed, steamed, baked or grilled, add into soup, dessert, stews..
Further, method of cooking miso soup as i am not able to serve lo immediately, i have left the miso paste in a separate container, let my mil to add in after she boiled the soup and scoop out in a bowl. This is to avoid the goodness of enzyme in the miso killed by high heat..

Breakfast: Sweet Potato Fries & pineapple juice
Lunch & Dinner: mee sua with miso chicken soup
Teatime: red bean dessert & sheep almond cookies


Sweet Potato FriesIngredients
1 japanese sweet potato
1 tbsp flour
1 tbsp egg

1/2 tbsp water

Steps:
1) cook the sweet potato (with skin) in boiling water for 15 mins
2) after cool down, peel off skin and cut it into sticks
3) mix flour, egg & water till combined
4) dip the sweet potato into the batter
5) pan fry with some oil till light golden brown


Can serve in a paper cup or any cute cup to let lo to have something "fresh"..hahaha... so that they will be interested to eat...


Miso Chicken Soup

Ingredients:
1 small piece of black fungus 云耳(soaked & cut into tiny slices)
some cabbage (cut into small size)
1 chunk of chicken breast (cut into tiny cube size)
1 egg (lightly beat)
1 tsp organic miso paste (1/2 tsp for 1 serving)

Steps:
1) cook misua till tender, rinse dry, soak in cold icy water for 30 secs, rinse dry again, add 1 tsp grapeseed/olive oil and mix well)
2) add 4 cups of water in a small pot
3) add in cabbage and black fungus when water is boiling
4) cook for 10-15mins (cabbage become tender)
5) add in chicken and cook for 5 mins
6) stir in the egg drops
7) off fire
8) add in miso paste and ready to serve


Red Bean Dessert
Ingredients
70g pre-cooked red bean
1/2 cup water
2 tbsp full cream milk / fresh milk
1 tsp muscovado sugar

Steps:
1) pour all ingredients in a small pot
2) cook under small fire till boiling
3) boil for 5 mins and ready to serve warm

Sheep Almond Cookies
