6/3/2015 (Fri) Garden pea walnut sticks

Happy Friday ^.^ dear all mummies ~
I was overslept this morning because I slept again after the alarm rang.
Baked garden pea walnut sticks this morning and the taste is superb!!!! I like the nutty fragrance explore in the mouth when chewing the stick.
Breakfast : Potato Bun and red bean dessert
Potato Mini Bun
Ingredient A:
150g Mashed Potato
(steam, mashe while still hot, cool down before used)

350g bread flour
20g milk powder
50g castor sugar (i used 45g only)
5g instant dry yeast
50g egg
90g milk
1/2tps salt ( i used 1/4 tsp only)

Ingredients B:
unsalted butter 70g

Steps:
1) Put all ingredients A follow by wet until dry into bread maker.
2) set function 8 / "dough" for 20 mins.
3) add in ingredients B and re-set "dough" function again for 20 mins.

4) I divided the dough into 3 portions. 2 portions i put into 2 separate zip lock bag then put into freezer immediately.

5) for making on the same day ===> the remaining 1 portion i put it back into the bread maker then close lid, proof for 45-60mins or double the size.

6) for next day making ===> thaw the frozen dough in room temperature for 1-2 hours. (even still cold but soften, can start shaping)

7) Once dough is soft, remove excess air, divide into few same quantity small dough, roll into ball shape, rest for 10mins, then can start shaping or put filling into the bun (if desired).

8) after shaping, let it proof for second time, 30-45mins.

9) brush bread surface with egg ( milk / honey / butter okay)

10) bake at preheated oven of 180'C for 15mins or golden brown

Red Bean Dessert

70g pre-cooked red bean
1/2 cup water
2 tbsp full cream milk / fresh milk
1 tsp muscovado sugar

Steps:
1) pour all ingredients in a small pot
2) cook under small fire till boiling
3) boil for 5 mins and ready to serve warm

Lunch and dinner : Chicken floss spinach rice balls 
Chicken Floss Spinach Rice Balls
Ingredients
1 small Potato

1 red sweet chilli pepper
1 bowl of baby spinach (leaf portion only)
1 chunk of chicken breast
3 tbsp mix grains / Rice (Pre soak overnight)

pinch of salt and pepper to taste

Steps:
1) Slice potato and put in a bowl
2) wash spinach and put in a separate bowl
3) cut the red chilli pepper into very tiny size (2mm x 2mm roughly)
4) in a steamer, steam the rice, chicken and potato at the same time in different container for 15mins
5) put the spinach & chilli (optional, as i do not steam it) into steamer as well for 5 mins only
6) tear the chicken meat into floss
7) mash the potato while it is still hot
8) use scissors cut the spinach into small size
9) mix everything till well combined.
10) prepare clean and greased with some oil plate
11) wash hand clean and rinse with cooked water
12) use teaspoon to scoop the rice mixture then form a rice ball by damp fingers
13) Ready to serve or can steam the rice balls to reheat it

Teatime : Garden pea walnut sticks and dragon fruit juice
Garden Pea Walnut Sticks
Ingredients
1/3 cup of frozen garden pea

1/3 cup of cooked rice
2g of unsalted butter
4-5 pcs of organic walnut

Steps:
1) Blend all ingredients together till smooth.
2) put the mixture in a plastic bag and cut a small hole at the edge
3) squeeze out the mixture onto a baking tray with a nonstick baking sheet on it.
4) bake at preheated oven of 170'C for 20-25mins or medium golden brown

13/5/2015 Wednesday (Day 2)

Day 2
My 21mo lo slept very early last night, at 9pm. But she was not eating much last night as her stomach was windy. This morning 4am, she vomited twice of the food she took last night. I went downstair to start preparing her foods at 5am. 

Breakfast: Sweet Potato Rings/Sticks

Lunch & Dinner: Steam meatball Rice

Teatime: previously cooked/baked ~ Black sesame mantou/ Pumpkin Mantou/ Butter cookies 




Sweet Potato Rings/Sticks (Flour-less, sugarless)
Ingredients
1 Japanese sweet potato
1 egg yolk
10g grated cheddar cheese

Steps
1) cook whole piece of sweet potato (with skin) till soft
2) remove skin and mash the sweet potato
3) add in egg yolk & cheese, mix well
4) put the mixture in a plastic bag
5) cut a hole at the edge and squeeze out desired patterns
6) bake at pre-heated oven of 170'C for 15-20 mins


Steam Meatball Rice (珍珠丸子)
Ingredients
3 tbsp pearl rice/white rice (pre-soaked overnight & slightly squeeze)
1/2 dried mushroom
1 clove garlic
75g meat tenderloin
25g silken tofu
2 pcs spring onion (diced)
dash of pepper powder
1/4 tsp sesame oil
1/4 tsp liquid amino / light soy sauce

Steps:
1) Blend all ingredients except rice and spring onion.(or can use knife to chop finely each ingredient)
2) add in spring onion and mix well
3) use measuring spoon (1 tsp) to scoop the minced meat mixture, roll into ball shape, then coat the meatball with the soaked rice
4) steam at medium heat for 20mins




Teatime for my gal to choose.

Recently i lazy to plan my 14mo lo's meal plan a week ahead. So, every morning i have to think what shall i cook. By looking at the recipes shared by other mummies, i have cooked the followings in 2 hours time:-
1) Breakfast: steam apple raisin cake + steam vege
2) Lunch: mini wantan + mee sua in vege soup
3) Teatime: a) one bite rice
b) vege cookies
p/s: i made these 2 because i worry she dun like the tomato in the "one bite rice"... @@...cookies sure she will sapu one...haha
Many thanks to the mummies who shared the recipes and i personally love the vege cookies very much!!! Smell good and taste good too!!
The wantan filling is simple but nice! Only apple puree and minced tenderloin pork..... I tasted 2 normal size wantan even just cooked in plain water!!! Surprisingly it is yummy!!!



Apple + raisin steam Japanese cake
Ingredients:
1/2 cup all purpose flour
1 tsp baking powder
1 egg beaten
2 tbsp milk/yogurt (I use yogurt)
1tbsp molasses
1tbsp grapeseed oil (or any vege oil)

You can use any fruit or vege puree and dried fruit. For this I use an apple and 1tbsp of raisin.

Sieve flour and baking powder then add in sugar. In another I beaten an egg then add in vco and yogurt. Puree the apple then mixed all with raisin. Pour in cup and steam 10mins.



Mini Wantan 
Apple puree + tenderloin minced meat
wantan skin cut into 1/4 size

Meesua, cooked and rinse with ice cold water then add 1 tsp olive oil or grapeseed oil

Soup base: vege soup base + fresh carrot slice, "huai san" and baby spinach





One Bite Rice

Cherry tomatoes cut into half and remove the seeds

steam potato : steam rice (ratio 1:1)
unsalted butter 1cm3 size
spring onion or any green vege ( i use baby spinach)
egg yolk 1 pc
add 1 rice size salt or some cheese for flavor

Steps:
1) blend the rice and potato till smooth. add in butter, vege, egg yolk and salt/cheese.

2) put into a plastic bag, cut the edge, squeeze the mixture onto the cherry tomatoes.

3) bake at preheated oven at 180'C for 15mins.





Easy Apple Vege Cookies (No mixer required)

Ingredients: 1/2 cup wholemeal flour, 25g unsalted butter (cubed), GOON tasty cheese 2 tbsp (grated), apple diced (1/4 apple), Cauliflower grated (roughly 3 -4 tbsp)

Steps:
Mix everything except butter with hand become mixture. Add in cubed butter and grab them become bread crumbs...longer time the butter will melt and a dough will be formed. Roll it flat into 0.5cm and cut out preferable shape. Bake at 180'C for 20mins.

Good morning dear all mummies. .
What a wonderful day with the sweetest smile from my 18mo lo before going to work.
Breakfast : Steam edamame, orange and orange juice
Lunch and dinner : Baked rice balls with cheese and prawn
Teatime : mini flower Tamago and red bean dessert


Steam Edamame
Just steam for 5 mins and ready to serve warm

100% Pure Orange Juice



Bake Rice Balls with prawn and cheese

Ingredients:
4 tbsp mix grain rice (cook with 4 tbsp water, by steaming)
1 egg yolk
1/2 tbsp plain flour
1/2 onion (chopped finely)
1/3 cup small prawns
some Bega cheddar block cheese ( cut into 1cm x 1cm thin slice)
dash of pepper

Steps:
1) cook rice first
2) chop the onion and cut the prawn into smaller size
3) sauteed the onion with some vegetable oil till fragrance then add in the prawn to stir fry for 1-2 mins by adding dash of pepper, off fire and set aside.
4) mix egg yolk and flour, then add in the prawn, mix well
5) pour the rice into the mixture and mix well too.
6) use a measuring teaspoon to scoop out 1 tsp the rice mixture to form a ball. align the rice balls on a non sticky baking sheet. (can make 24 pcs rice balls) the rice balls might be sticky but you can wet your palm a bit, then will be handled easily)
7) place a slice of cheese (1cm X 1cm size) on each rice balls.
8) bake at preheated oven of 160'C for 10mins (at middle rack)
9) remove tray and put it on the upper rack then set to 180'C, bake for another 5mins till the cheese turn light golden brown



Mini Flower Tamago
Ingredients:
1 egg yolk
10g milk powder
10g coconut milk
120g potato starch
20g icing sugar (can replaced by fine molasses/muscovado sugar )

Steps:
1) mix the egg yolk and sugar, using hand whisk to beat till pale white.
2) add in milk powder and coconut milk then mix well.
3) add in the potato starch by 3 times separately.(maybe not use all the potato starch), mix by spatula or spoon till dough is form...it suppose not sticky soft dough.
4) Pre-heat oven at 150'C.
5) divide the dough into 3 portions. Roll the dough become flat at 3mm thickness, use mini cookie cutter to cut out
6) place the cookies onto a non-stick baking sheet.
7) bake for 12-15mins. when half way baking, take out the tray and turn over the other side and continue baking till light golden brown
