07/04/2015 Tuesday meals

Good Morning dear all~
I was busying baking this morning as I was baking some extra snacks for 2 little Princesses of my relative whom we will meet them tonight. This is the first time we meet the 2 princesses and I hope my lo will enjoy playing with them. They are leaving to Ireland this coming Monday and there will be a long time till we meet again.

Breakfast: Oil Free sweet potato banana sticks & honey drink

Lunch & Dinner : Mix grain rice served with homemade hotdog & lotus root soup

Teatime : Cheesy Bites (in flower shape & stick) & yogurt



Oil Free sweet potato banana sticks
Ingredients
30g cooked mashed sweet potato
30g mashed banana
10g muscovado sugar
10g milk powder
2 egg yolks
60g cake flour/low protein flour

Steps:
1) Blend all ingredients except the flour till smooth
2) sieve in flour and mix well
3) put the mixture into a plastic bag or piping, squeeze out sticks or rings on the baking tray laid with non stick baking sheet
4) bake at preheated oven of 170'C for 15 mins or light golden brown



Homemade Baby Hotdog
Ingredients
65g tenderloin (pork or chicken)
1/3 cup rolled oat (soak in hot water for 20mins)
30g grated apple
10g cheddar cheese

some egg wash apply before baking

Steps:
1) Blend all the ingredients
2) put in a plastic bag, cut a hole at the edge (size of opening will be the size of hotdog), squeeze out 5-6cm length on the baking tray laid with non stick baking sheet
3) bake at preheat oven at 180'C for 10-15mins
4) lightly pan fry with some olive oil or grapeseed oil before serving



Flower shape Cheesy Bites

INGREDIENTS
110gm / 1 cup All purpose Flour 
50 gm Cold Butter, cubed
2 Tsp muscovado sugar
70gm Grated Cheddar Cheese
1-2 Tbsp Cold Water/cold milk

Steps:
1. Rub together the flour, sugar and butter until it resembles a breadcrumb texture.
2. Add the grated cheese and a tbs of water at a time kneading by hand to form a nice dough ball. It shouldn’t be sticky. If sticky add a little more flour.
3. Place on to floured surface and roll out until it is about 2-3mm thick. Cut with mini cookie cutters or cut into squares. You can even roll into 10cm x 8cm flat dough and cut into stripes.
4. Place onto a lined baking tray and bake in a 180 degree Celsius for 10-12 minutes or until lightly golden brown.
