Good Morning and blue blue day for my 17mo lo as she cried badly this morning during i left home to work... Poor baby~
Breakfast: rolled oat in grape juice
Lunch: chicken nuggets. Grapes, corn soup and sweet corn
Teatime: cheesy bites in flower shape & blueberry yogurt


Rolled oat in grape juice
Ingredients
6-7 pcs seedless black grapes
(blend, sieve away the skin, set aside)
2 tbsp organic rolled oat
1/2 cup water
1/3 cup milk
1 tsp raisin
dash of chia seed

1) cook rolled oat and chia seed in the water for 1 min.
2) add in grape juice and milk, cook for another 1min t
3) pour rolled oat in a bowl then top with some raisin.
4) ready to serve warm



Chicken Nuggets
Ingredients
65g minced chicken breast
55g mashed potato
1 tbsp spring onion (chopped finely)
5-10g grated carrot
10g grated cheddar cheese
1 brown button mushroom (chopped finely)
dash of pepper
1 tsp corn flour

mix all ingredients together. scoop 1 tbsp the mixture and form a ball shape then press lightly and pan fry in hot vegetable oil. (u may form it into finger shape too) pan fry till both sides golden brown.



Mini Cheesy Bites.
INGREDIENTS
70gm Plain Flour ( I used organic plain flour)
25 gm Cold Butter, cubed
2 Tsp muscovado sugar
50gm Grated Cheddar Cheese
1-2 Tbsp Cold Water/cold milk

Steps:
1. Rub together the flour, sugar and butter until it resembles a breadcrumb texture.
2. Add the grated cheese and a tbs of water at a time kneading by hand to form a nice dough ball. It shouldn’t be sticky. If sticky add a little more flour.
3. Place on to floured surface and roll out until it is about 2-3mm thick. Cut with mini cookie cutters or cut into squares.
4. Place onto a lined baking tray and bake in a 180 degree Celsius for 10-12 minutes or until lightly golden.
