4 days off starting tomorrow~
Prepared simple meals with simple easy recipes..

Breakfast: Cheesy Potato Pancake & melon juice

Lunch & Dinner: Tomato meat porridge in chicken soup base
Teatime: Garden Pea Rice Sticks & Orange Juice

Cheesy Potato Pancake
Ingredients:
1/3 cup grated potato ( i used 1 potato)
1.5 tbsp plain flour (any flour)
1/4 cup grated cheddar cheese
1 whole egg (for above 1 yo) OR 2 egg yolks (for 9mo above)

Steps:
1) peel the potato skin
2) grate the potato with a grater
3) soak the grated potato in water for 15 mins
4) rinse off the water and wash thru running water
5) rinse off excess water then add in egg, flour and cheese mix well in a big bowl
6) heat pan with some oil and pour in the batter and flatten and level the pancake
7) pan fry with very very small fire and close lid till the pancake is formed
8) turn over another side and continue pan fry till golden brown
9) after cool down, use a knife to cut the pancake into smaller size or use cookie cutter to cut out desired shapes.
Garden Pea Rice Sticks
Ingredients:
1/3 cup frozen garden peas
1/3 cup cooked soft rice
1 tsp muscovado sugar
1 tsp water (can omit if your rice is soft enuf and your blender can move on)
1 tsp unsalted butter

Steps:
1) Steam garden and cooked rice till soft (mine is overnight rice, so i steam it... can omit if you cook fresh rice and no need to steam the garden peas too)
2) blend all ingredients till smooth
3) put the mixture in a plastic bag
4) cut a hole at the edge
5) squeeze out ring or stick shapes or any shapes you like on non stick baking sheet
6) bake at preheated oven of 180'C for 20mins or till lightly golden brown at the edges


Tomato meat Porridge
Ingredients
2.5 tbsp mix grain
3 cups of chicken soup stock
2 cherry tomatoes
some carrots
1 chunk of pork tenderloin

cook for 2 hours in slow cooker
