No Monday blue today as traffic was extremely good if compare to normal Monday...keke... I was late to depart from home as my 20mo lo was crying for me while I was preparing her food around 5.30am. I have to stop all food preparation and cooking half way to comfort her , DL her, change her diaper and finally I resumed cooking at 6.15am.

Breakfast : Beetroot kikaku, steam baby corns and fresh milk

Lunch and dinner : Wantan in anchovies soup and vegetable "di huang miao"
Teatime : Sweet potato rice rings and honey drink

Beetroot Kikaku
Ingredients
Glutinous Flour 50g
All purpose flour 100g
Sugar 30g ( i put 25g only, sweetness Okay)
Instant dry yeast 1/2 tsp
Grape seed oil / any plain vege oil 15g
water 110g + beetroot puree 10g 

*** please add 1/2 of liquid first then remaining just pour in slowly until a very soft dough is form, can stop adding liquid. If too sticky to hands, can add some oil..


Steps:
1.)mix all ingredients till well combined. then divide dough into 12 portions.

2.)rub your hands with some oil, then roll each small dough into round, put on cleaned banana leave / pao paper, then press slightly.

3.)Place the kikaku on the rack and put inside the steamer then close lid to proof for 15-20 mins.

4.)Steam at boiling water for 10 mins, off fire and remove from steamer immediately.

5.) brush some grape seed oil on the surface of kikaku to prevent skin dry.




Mini Wantan in Anchovies soup
Ingredients:
3 tbsp mini diced SENG KUANG
6 tbsp minced tenderloin meat (pork / chicken)
few drops sesame oil
4-5 drops Liquid Amino
dash of pepper
1 tsp corn flour

10 pcs wantan skin ( cut into 1/4 size )

Steps: 
1) mix all ingredients together 
2) scoop a very tiny size of the meat onto the wantan skin and fold half become triangle shape, OR just wrap like the stall sold wantan
3) cook the mini wantans in boiling water until all wantans are floating
4) scoop out the wantans and place in a bowl of soup and ready to serve warm

soup base: some anchovies + 1 small pc of ginger + dash of pepper
1) soak and drain the anchovies
2) heat pan with some oil, fry the anchovies till light golden brown
3) fill 2 bowls of water in a small pot, add in the ginger and fried anchovies
4) cook for 15 mins 
5) add in any preferred green leaf vegetable and cook for another 2 mins
6) ready to serve with the cooked mini wantan



Japanese sweet potato rice rings


Ingredients :
(Ratio 1:1) cooked mix grains / rice : sweet potato
1-2 cm3 unsalted butter (for easier in blending and crunchiness) (can omit and replace by water for lo below 1yo
some grated cheddar cheese

Steps:
1) Blend all the ingredients till smooth then put into a plastic bag. 

2) Cut a small hole at the edge. (Bigger size will resulting not so crunchy) squeeze out circle shape on the non stick baking sheet laid on baking tray
3) Bake at 160'C for 20-25mins or golden brown.

*** Texture: crunchy if colour turn light brown evenly...
