Dutch Baby is a type of pancake. It's called puffed pancake. The texture is soft and fluffy, served with any favorite fresh fruits, yummy and healthy ~

During baking, you can see the pancake is raising high and you can feel happy too... hahaha... my first attempt was a failed one because I measured wrongly the quantity for the flour....@@ so weak my mathematic....

Breakfast : Dutch Baby with strawberry and mango

Lunch : Mix Grains Rice with Hairy Ground and Pork Tendeloin & Kunbu tomato miso soup

Teatime : Sugarless Apple cheese cookies & White fungus red dates dessert


DUTCH BABY "Puffed pancake"
Ingredients


[ best ratio
egg : flour : milk
1 : 30g : 60ml ]
10g unsalted butter
2 eggs
60g all purpose flour
120ml fresh milk
1 tsp sugar
pinch of salt
1/2 tsp organic vanilla bean paste (can omit if you don't have)
for topping decoration
some icing sugar
any fruits ( blueberry/strawberry/mango/papaya/apple/etc)
Steps
Place a 20cm cast iron skillet (I am using a 24cm non stick pan and remove the handle) inside oven and preheat oven to 210 degrees C).
In a medium bowl, beat eggs with a whisk until light. Add milk and stir. Gradually whisk in flour, vanilla extract and salt.
Remove skillet from oven. Melt butter in hot skillet so that inside of skillet is completely coated with butter. Pour all the batter in the skillet and return skillet to oven.
Bake until puffed and lightly browned, about 15-20 minutes. Remove and place on a wire rack to cool down and sprinkle with powdered sugar



Hairy Ground with Pork Tenderloin
Ingredients


1 chunk of pork tenderloin
1/4 Hairy ground
1 " carrot
1 clove Garlic
1 bowl of water
2 tsp corn starch
1/2 tsp Liquid Amino

Steps:
1) cut garlic finely, cut hairy ground into small bite size, cut carrot into tiny cube size, cut pork into tiny cube size too.

2) heat pan and pour in 1-2 tsp olive oil, sauteed garlic till light golden brown.
3) add in pork tenderloin and stir fry for 1 min
4) add in hairy ground and carrot and stir fry for another 1 min
5) add in 2/3 bowl of the water, close cover and shimmer for 3 mins
6) mix the corn starch in the 1/3 bowl of water, then add in and mix well with the hairy ground
7) off fire and pour on top of the cooked mix grains rice, ready to serve warm.

Kunbu Tomato miso soup
1 slice Kunbu
3 cups of water
2 cherry tomatoes
1-2 tsp miso paste

Boil all ingredients for 30mins... add in miso paste only after off fire..


Sugarless Apple Cheese Cookies
Ingredients
60g grated apple (drain away juice)
100g all purpose flour / cake flour
20g grated cheddar cheese
25g unsalted butter

Steps:
1) mix the first 3 ingredients together with hand
2) lastly add in butter and knead till dough is formed
3) dust kneading mat with some flour, roll the dough till 2-3mm thick
4) cut by cookies cutter
5) bake at preheated oven at 180'C for 15-20mins or till lightly golden brown
