Thanks for a Taiwanese mummy (吳貞穎who invented this rice cracker recipe.
First attempt this morning!
My dough skin maybe too thick, turned out not so crunchy but taste good! Milky taste!

RICE CRACKERS
Ingredients:
Fresh milk 50g
Unsalted butter 10g

Salt 2g
Caster sugar 10g (can reduce according to ur own preference)
Rice (dun use overnight rice) 25g
Potato starch 25g
cake flour little bit

Steps:
1. Add fresh milk, unsalted butter, sugar n salt into pot, using small fire until e butter melted. (Dun off fire)

2. Add in potato starch into mixture 1 and stir quickly until no moisture (water) in pot and off fire.

3. Blend the mixture 2 with rice (after blend texture like mochi)

4. place a plastic wrap on working top and put the rice mixture on top and place another layer of plastic wrap. Flatten it into 0.1 to 0.2cm

5. A little bit sticky at this time, can sprinkle some flour to prevent sticky.

6. Mould it into preferred shape. Preheat oven, bake at 200°c for 3 mins, and reduce the heat to 120°c and contd bake for another 20 mins.
