Happy Wednesday~
Simple meals were prepared this morning... Today i modify a bit the recipe for 40mins black rye milk bun by adding TangZhong "water rout".
Breakfast: black rye milk bun, raisin & dragon fruit




40mins method soft milk bun 
Ingredients
1 teaspoon instant yeast
2 tablespoon muscovado sugar (or molasses/brown sugar)
1/3 cup (80ml) warm milk
2 tablespoon olive oil
1 cup bread flour + 3 tablespoon black rye flour
1/8 teaspoon salt
1 tablespoon beaten egg
remaining egg add in some milk for egg wash
4 pcs of ham and 4 tbsp grated cheese (if cheesy ham bun is made)
Steps
1. Add instant yeast, brown sugar, olive oil, milk into a mixing bowl, stirred it and rest aside for 15 mins till you will see floating foam.
**my modification: i use 40ml milk + 1 tbsp bread flour (scoop from the 1 cup bread flour) , stir well and cook under low heat by keep stirring it until line is clearly apprear then remove from fire. (TangZhong)
for the balance 40ml milk, i just follow the step 1.
2. Mix in flour, salt, **TangZhong and 1 tablespoon of beaten egg then use a spatula to fold and mix well the mixture into a dough form. (put in breadmaker, function “dough” for 10mins)
3. Then use electric kneading hook to knead for about 5-10 mins or till well combined. Then take out the dough and hand kneading for another 1-2 mins.
4. - Roll, cut and shape into 8 small doughs. (plain milk bun)
- Roll, cut and devide into 8 small portions, roll each portion into oval shape, place ½ piece of ham onto the dough then roll like a swiss roll. Close the end and fold into half, use a knife to cut the dough and expose the ham.
5. Grease little oil on the baking pan and line the dough in, cover with wet cloth and let it proof for about 10 mins. (or put in oven with a bowl of hot water and close the oven door for proofing)
6. Brush egg wash onto the bread.
7. Bake at pre heat oven at 200 degrees C for 12-15mins (baking time vary for different oven)
Lunch: dried scallop meat porridge


Teatime: blueberries yogurt and oatmeal cookies
