Monday Blue for my 20mo lo as she woke up 6.00am this morning and I was trying to DL her to make her sleep again at 6.20am but I failed. Until 6.45am she still not yet sleep and I have no choice to bring her to the kitchen and continue my cooking.
Actually i slept nearly 12 midnight yesterday because of ironing cloths and washing bottles after my lo slept. So, hubby requested me not to wake up so early at 4am because of worrying I do not have sufficient sleep. So, I woke up at 5am this morning and prepared the following meals:-
Breakfast: 40-minute Soft Milk Bun and farm fresh cow milk
40 mins method soft milk bun
1 teaspoon instant yeast
1 tablespoon brown sugar
1 tablespoon caster sugar
1/3 cup warm milk
2 tablespoon olive oil
1 cup bread flour (can add more flour if too wet and can't form a dough)
1/2 teaspoon salt
1 tablespoon beaten egg
remaining egg add in some milk for egg wash
1 tablespoon brown sugar
1 tablespoon caster sugar

Steps
1. Add instant yeast, brown sugar, caster sugar, olive oil, milk into a mixing bowl, stirred it and rest aside for 15 mins till you will see floating foam as showed in the picture.
2. Mix in flour, salt and 1 tablespoon of beaten egg then use a spatula to fold and mix well the mixture into a dough form.
3. Then use electric kneading hook to knead for about 5-10 mins or till well combined.
4. Then take out the dough and hand knead for another 1-2 mins.
5. Roll, cut and shape into 6 small dough.
6. Grease little oil on the baking pan and line the dough in, cover with wet cloth and let it proof for about 10 mins. ( I let it proof for 20-25mins)
7. Brush egg wash onto the bread.

8. Bake at pre heat oven at 180 degrees C for 10mins (baking time vary for different oven)
Lunch and Dinner : Peanut Lotus Root chicken soup served with mix grains rice
Peanut Lotus Root chicken soup
Ingredients
2 chicken tight (removed skin)
1 pc Lotus Root (sliced thiny)
10 pcs red dated
2-3 tbsp organic ground nut
2 litre water
Steps:
1) Boil in high heat for 10 mins
2) turn to low heat for 1.5 hours
Teatime : Sweet Potato sesame Rice sticks & pomegranate
Sweet Potato sesame Rice sticks
Ingredients
1/3 bowl of cooked rice
1/3 bowl of mashed sweet potato
5g unsalted butter
1 tsp sesame seeds
1/2 tsp black sesame seeds
steps:
1) mix all ingredients till combined
2) divide into 2 portions
3) put into a plastic bag and roll them flat
4) place in the freezer for 30mins
5) cut into 5-6mm width stripes
6) bake at preheated oven of 180'C for 15mins
