27/3/2015 Happy Friday

What a happy for a ftwm on the last working day of the week....

Recently I always missed out the alarm but self-awake at 5am. Maybe I am really tired already. i was sitting at the dining area and looking at the bunch of recipe print outs, finally decide to bake an express pizza, potato rings & sticks and raisin butter rice.

Surprisingly the pizza is really yummy and this is the first time i bake pizza for my 20mo lo. I really hope she will like it.

Breakfast: 10-min Mini Pizza & honey dew juice


10-min Mini Pizza
Ingredients

Pizza dough~
1/2 cup (55g) Self-Raising Flour (i used ---> 1/2 cup all purpose flour + 1/2 tsp baking powder + pinch of salt)
20g unsalted butter (tiny cubed)
1 tbsp full cream milk

Pizza topping~
4 tbsp (STEAM for 10mins) frozen mix vegetables (carrot, garden pea, sweet corn) (i used fresh carrot, frozen pea & fresh sweet corn)
1/2 slice of ham (optional, can omit if do not have)
some grated cheddar cheese
2 tsp pure tomato paste (i do not have it, i used maggi tomato sauce)

steps:
1) add butter into the flour and rub till bread crumbs stage
2) slowly add in milk to form a soft dough (can stop adding if dough is formed)
3) divide dough into 4 portions
4) roll into ball shape then press into flat
5) shredded 1 layer of cheddar cheese on the flat dough
6) spread 1 tbsp of the mix vegetables on each pizza flat dough
7) put 1/2 tsp tomato sauce on each mini pizza
8) lastly shredded another layer of cheddar cheese on top of the mix vegetables
9) bake at pre-heated oven of 180'C for 10 mins

P/S: i have remaining mixture of potato sticks and i transformed it into the pizza dough. just squeeze out the mixture into swirl form until almost same as the pizza flat dough size, and continue steps 6 onwards.

Honey Dew Juice
2 slices of honey dew
1 tbsp plain yogurt

Blend till very smooth and ready to serve cold




Lunch & Dinner : Butter Raisin Rice & Spinach soup

Butter Raisin Rice
Ingredients
4 tbsp mix grains rice (pre-soaked overnight and drain away soak water) (quantity is enough for 2 servings for my 20mo lo, please adjust accordingly to your lo's serving size)
1 handful of organic raisin
1 handful of mix vegetables
10g unsalted butter
pinch of salt
4 tbsp water
1/2 egg (lightly beat)

Steps:
1) heat pan, melt the butter
2) add in the rice and stir fry for 2 mins
3) add in raisin and mix vegetables, keep stir frying for another 1 min
4) transfer the fried raw rice into mini rice cooker / a bowl
5) add in the water and egg, then mix well
6) cook rice as usual or steam for 20mins

Spinach soup
5oz of frozen soup stock
some baby spinach

Boil for 2 mins and ready to serve



Teatime: Potato Rings & Golden pear Juice

Potato Rings
Ingredients
75g cooked mashed potato
8g unsalted butter
8g potato starch
1/2 egg (30g)
5g cheddar cheese

Steps:
1) blend the above ingredients till smooth
2) put into a plastic bag
3) cut a hole at the edge (3-4mm)
4) squeeze out ring shape or stick shape on non-sticky baking sheet
5) bake at pre-heated oven of 170'c for 15mins or light golden brown

Golden Pear Juice
1/2 pc of Golden Pear
some water

Just Blend till smooth and sieve through a strainer for smoother texture...
ready to serve cold
