Good morning dear all mummies. .
What a wonderful day with the sweetest smile from my 18mo lo before going to work.
Breakfast : Steam edamame, orange and orange juice
Lunch and dinner : Baked rice balls with cheese and prawn
Teatime : mini flower Tamago and red bean dessert


Steam Edamame
Just steam for 5 mins and ready to serve warm

100% Pure Orange Juice



Bake Rice Balls with prawn and cheese

Ingredients:
4 tbsp mix grain rice (cook with 4 tbsp water, by steaming)
1 egg yolk
1/2 tbsp plain flour
1/2 onion (chopped finely)
1/3 cup small prawns
some Bega cheddar block cheese ( cut into 1cm x 1cm thin slice)
dash of pepper

Steps:
1) cook rice first
2) chop the onion and cut the prawn into smaller size
3) sauteed the onion with some vegetable oil till fragrance then add in the prawn to stir fry for 1-2 mins by adding dash of pepper, off fire and set aside.
4) mix egg yolk and flour, then add in the prawn, mix well
5) pour the rice into the mixture and mix well too.
6) use a measuring teaspoon to scoop out 1 tsp the rice mixture to form a ball. align the rice balls on a non sticky baking sheet. (can make 24 pcs rice balls) the rice balls might be sticky but you can wet your palm a bit, then will be handled easily)
7) place a slice of cheese (1cm X 1cm size) on each rice balls.
8) bake at preheated oven of 160'C for 10mins (at middle rack)
9) remove tray and put it on the upper rack then set to 180'C, bake for another 5mins till the cheese turn light golden brown



Mini Flower Tamago
Ingredients:
1 egg yolk
10g milk powder
10g coconut milk
120g potato starch
20g icing sugar (can replaced by fine molasses/muscovado sugar )

Steps:
1) mix the egg yolk and sugar, using hand whisk to beat till pale white.
2) add in milk powder and coconut milk then mix well.
3) add in the potato starch by 3 times separately.(maybe not use all the potato starch), mix by spatula or spoon till dough is form...it suppose not sticky soft dough.
4) Pre-heat oven at 150'C.
5) divide the dough into 3 portions. Roll the dough become flat at 3mm thickness, use mini cookie cutter to cut out
6) place the cookies onto a non-stick baking sheet.
7) bake for 12-15mins. when half way baking, take out the tray and turn over the other side and continue baking till light golden brown
