20/3/2015 Friday : Happy World Happiness Day (20 mo)

Happy World Happiness Day ~ 世界幸福日快乐!!!!



I was rushing again today as I started cooking at 6am today due to my little princess was crying for milk around 4.40am and I DL her and let her sleep deeply before I sneaked to the kitchen and start cooking.




Breakfast : Sweet corn flaxseed pancake
Ingredients:
1/2 cup milk
1/2 egg
1 tbsp muscovado sugar



5-6 tbsp all purpose flour / cake flour

1 tbsp flaxseed meal
1 tsp aluminum free baking powder
40g sweet corn



Steps: 

1) just mix milk, egg and sugar, stir well till combined.
2) add in other dry ingredients and stir well
3) heat frying pan with low fire, pour in some oil, use kitchen towel to wipe evenly
4) scoop 1 tsp onto a the greased frying pan. place the batter till no more space.
5) close lid for 1 min
6) turn over and pan fry another side till golden brown. 


Lunch and Dinner : Macaroni with tomato meat sauce



Tomato sauce
Ingredients: 
1/3 cup minced pork marinated with 2 tbsp grape juice

        

           {10 pcs organic cherry tomatoes

 Blend  {6 pcs black seedless grapes (Blend and sieve)

           {1/2" carrot (cut into small pieces)
2 shallots (chopped finely)

1 inch carrot (cut slices)

1-2 tbsp grated cheese

some pepper and italian herbs



Steps:
1) Blend grapes, tomatoes and carrot together then sieve through a strainer. can yield 1/2 cup mix juice
2) Heat pan with olive oil, saute onion till golden brown then add in minced pork and carrot and stir fry for a while.
3) pour in 1/2 cup mix juice and 1/2 cup water, boil then simmer for 2 mins.
4) add 1 tbsp grated bega cheese and cook till cheese melted..
5) add in some pepper and italian herbs.
6) off fire and done.




Teatime : 40 mins cheese bun and Barley drink
Ingredients:
1 teaspoon instant yeast
2 tablespoon muscovado sugar (or molasses/brown sugar)
1/3 cup (80ml) warm soy milk (or milk)
2 tablespoon olive oil
1 cup bread flour + 1 tablespoon cake flour
1/8 teaspoon salt
1 tablespoon beaten egg
remaining egg add in some milk for egg wash

1 or 2 cheese sticks (for bread filling), some grated cheddar cheese (for topping)

Steps
1. Add instant yeast, brown sugar, caster sugar, olive oil, milk into a mixing bowl, stirred it and rest aside for 15 mins till you will see floating foam.
2. Mix in flour, salt and 1 tablespoon of beaten egg then use a spatula to fold and mix well the mixture into a dough form.
3.if use bread maker --- put in breadmaker, function “dough” for 20mins
3.if use stand mixer --- use electric kneading hook to knead for about 10-15 mins or till well combined. Then take out the dough and hand kneading for another 1-2 mins.
4. Roll, cut and shape into 8 small doughs, roll the dough become a ball. Wrap 1/2 cheese stick into one small dough
5. Grease little oil on the baking pan and line the dough in, cover with wet cloth and let it proof for about 10 - 15 mins. (or put in oven with a bowl of hot water and close the oven door for proofing)
6. Brush egg wash onto the bread.
7. Bake at pre heat oven at 200 degrees C for 12-15mins (baking time vary for different oven)
