19/3/2015 Thursday : Meals Of The Day

Listened to the radio while driving to work, what is the most happiness thing in our life was the discussing topic. For me, cooking healthy foods for my princess is one of my happiness. Watching her grows healthily and happily everyday, I feel very happy and pleased.

Breakfast : 40min method cheese bun & Orange yogurt drink

40 mins method cheese bun
Ingredients:
1 teaspoon instant yeast
2 tablespoon muscovado sugar (or molasses/brown sugar)
1/3 cup (80ml) warm soy milk (or milk)
2 tablespoon olive oil
1 cup bread flour + 1 tablespoon cake flour
1/8 teaspoon salt
1 tablespoon beaten egg
remaining egg add in some milk for egg wash


1 or 2 cheese sticks (for bread filling), some grated cheddar cheese (for topping)

Steps
1. Add instant yeast, brown sugar, caster sugar, olive oil, milk into a mixing bowl, stirred it and rest aside for 15 mins till you will see floating foam.
2. Mix in flour, salt and 1 tablespoon of beaten egg then use a spatula to fold and mix well the mixture into a dough form.
3.if use bread maker ---> put in breadmaker, function “dough” for 20mins
3.if use stand mixer ---> use electric kneading hook to knead for about 10-15 mins or till well combined. Then take out the dough and hand kneading for another 1-2 mins.
4. 
Roll, cut and shape into 8 small doughs, roll the dough become a ball. Wrap 1/2 cheese stick into one small dough

5. Grease little oil on the baking pan and line the dough in, cover with wet cloth and let it proof for about 10 - 15 mins. (or put in oven with a bowl of hot water and close the oven door for proofing)
6. Brush egg wash onto the bread.
7. Bake at pre heat oven at 200 degrees C for 12-15mins (baking time vary for different oven)

Orange Yogurt Drink
Ingredients: 1 orange, 1/2 tsp honey, 1 tsp plain yogurt, some water.
Blend all ingredients till smooth, sieve through  a coffee strainer, ready to serve cool.


Lunch and Dinner :  Pumpkin Fried Rice
Ingredients
1 bowl of mix grain rice ( i steam 3 tbsp mix grains with 3 tbsp water)
2/3 bowl of cubed organic pumpkin
1-2 tbsp shrimps
1 shallot (chopped finely)
1/2 tsp liquid amino
1/2 egg ( remaining from baking the milk bun)
some spring onion or any green vegetables ( i used pea sprout)
dash of pepper
1/2 cup water

Steps:
1) heat wok and add in 1 tbsp olive oil / grape seed oil, sauteed the shallot  till fragrance
2) add in the shrimps, stir fry a while
3) add in the pumpkin and stir fry 1 min
4) add in water and shimmer for 2 mins
5) add in the egg and vegetables, stir fry a while then add in rice
6) sprinkle some pepper and add in the liquid amino
7) stir fry till well mix and off fire





Teatime : Black sesame dessert 
Ingredients
1/2 cup cooked rice
1 cup water
2 tbsp sesame powder
1 ~ 1.5 tsp Natural rock sugar
1) blend water and cooked rice with blender
2) pour into a sauce pan, add in sesame powder, keep stirring while cooking under small fire. If too thick the mixture, add little bit water.
3) add in rock sugar and cook till melted.
4) blend the mixture again to have more smoothie texture.
5) ready to serve warm.
