Opps ...!! mummy woke up late again due to my 22mo lo was sleeping on my arm and I worried if I moved my arm will wake her up. Finally I got up at 5.22am instead of 4.30am.

Actually I was planning to make some food art for my gal but i found out i don't have seaweed to make the eyes, nose, mouth, etc... therefore, just wrap the rice with the egg sheet...;P


Breakfast : knead-less yogurt soft bun and fresh milk

Lunch and dinner : Omu-Rice with meat patties and beetroot apple soup


Teatime : Steam sweet potato and carrot & strawberry yogurt





Knead-less yogurt bun 
(Yield 16 buns)

Ingredients
150g Plain Natural Yogurt
300g high protein flour
50g muscovado sugar or any sugar
1/8 tsp sea salt
20g milk powder
1 egg
1 tsp dry instant yeast
20g grated cheddar cheese
35g unsalted butter (room temperature) / olive oil


Steps:
1) mix all ingredients in a big bowl.

2) cover bowl with cling wrap, leave a small hole for air flow.

3) keep in the fridge 2 hours onwards, after 2 hours, you may take out and shape any time.

4) take out the wet dough and place on greased mat, I use some oil to grease my hands too.

5) divide dough into 16 equally small dough if intent to have round bun 

OR
Divide dough into 2 portions,  shape the dough into a big ball, then roll flat. Use knife to cross cut the flat dough into 8 triangles. cut a bit at the short end and roll both sides up to the sharp angle and a croissant shape is formed.

6) place the formed buns on the baking tray, put inside the oven (power off) and proof for 30mins. You may place a bowl of hot water inside the oven to help the proofing process better.

7) after 25mins, Remove the baking tray from the oven. Pre-heat the oven at 170'C for 5 mins.

8) Bake the buns for 16 mins or till light golden brown

9) brush some unsalted butter on the bread surface for better appearance. 



OmuRice (Omelette Rice)

Ingredients:
(A) Rice
4 tbsp mix grains, cook rice as usual, set aside
1 tsp crushed garlic
1 tbsp sesame oil
1 tsp liquid amino

(B) Egg wrap
2 eggs + 1 tsp corn flour + 1 tsp water

(C) Meat patty
1/2 dried mushroom (diced finely)
3-4 tbsp minced pork or chicken
1 tsp corn flour or potato starch
dash of pepper powder
pinch of salt

Steps:
1) heat pan with medium heat, pour in sesame oil
2) sauteed the garlic, add in the cooked rice
3) add in the liquid amino and quick stir fry for 30 seconds
4) off fire and done

5) mix the corn flour with water in a bowl, stir well
6) crack in the eggs and mix well
7) pour 1/3 of the egg into frying pan to pan fry a thin layer of egg sheet, repeat till finish all the egg
(total you will have 3 egg sheets, extra one is just for in case only)

8) mix the minced meat with mushroom, pepper, salt, corn flour
9) divide the mixture into 4, roll by hands and form balls then lightly press it flat
10) pan fry till both sides light golden brown


Beetroot Apple Soup
Ingredients
2 chicken tights
1 medium beetroot
1 organic apple
1 large onion
1/2 carrot
1.5 litre water

steps:
1)  Blanch the chicken tights in boiling water for 2-3 mins. Dish and set aside.

2. Bring water to a boiling point. Add in all the ingredients and re-boil the soup . Then simmer for at least 1-2 hours.

p/s: no seasoning is required as the soup is naturally sweet and yummy

(simple and easy)
