Last Sunday I was very happy that I had purchased a cook book that is for 8 years meals for little ones which consists more than 4000 easy made recipes. The recipes are good for baby's overall health and brain development. Furthermore, it could help me more easier in planning the daily foods for my 22mo lo.
Today i followed one of the recipes but changing the method of cooking; from frying to baking to avoid oily.
Breakfast : Banana cake, grapes, baked potato balls, fresh milk
Lunch and dinner : Fried Udon with mix vegetables & Steam apple juice
Teatime : Baked potato balls in sticks & Banana yogurt
Banana cake was baked yesterday, it is also mummy's breakfast today...very yummy and the sweetness is just nice. Luckily I had reduced 50% of the sugar as per recipe.

Stir Fried Udon with mix vegetables
Ingredients :
1 pack fresh udon, wash and soak in filtered water prior cooking
3/4 onion (diced)
1/5 pack of shimeiji mushroom
1" zucchini
1/2 mini red bell pepper
1/2 mini orange bell pepper
1" carrot (striped)
Olive oil
1 tsp liquid amino
Some sea salt and black pepper powder to taste
Steps:
1) heat pan and add in olive oil
2) sautéed onion till fragrant
3) add in other ingredients and stir fry for 1 min
4) add in sea salt, liquid amino and udon.
5) add in dash of black pepper powder and stir fry for another 1 min and done
Steamed Apple Juice
Ingredients
1 organic apple
1 tsp honey
100ml drinking water
Steps:
1) peel, cut and slice the apple, steam for 10mins
2) put the steamed apple in blender, add in honey and water
3) blend and ready to serve warm or cold
p/s: steamed apple juice has no problem of oxidation, it is suitable for mummy to prepared earlier and serve lo later
Baked Potato Balls
Ingredients:
1 medium potato
1 tbsp rolled oat (soak in hot water for 15 mins)
1 tbsp grated cheddar cheese
1 tbsp shredded carrot
1/4 onion (diced finely)
some bread crumbs (i use homemade bread, bake at 120'C for 15-20mins till crust)
steps:
1) slice and steam potato for 10-15mins, mash it while still hot.
2) heat pan, add some oil, sauteed the onion and carrot for a while, set aside.
3) mix mashed potato, rolled oat, cheese and the sauteed onion & carrot together
4) use 1 measuring spoon (tsp) to scoop the mixture, then roll and form a ball by hand
5) dip the ball into the bread crumbs, then place on the baking tray
6) repeat step 4 till all mixture is finished
7) bake at preheated oven of 180'C for 10-15mins

ReplyDeleteHi Aimei, Thanks for your likes.. yes i cook everyday for my lo which i wake up early around 4am ~ 5am. We sleep every night around 10.30pm. Sacrificing sleep times is a must for me in order for me to prepare her foods before leaving home to work... ^.^
