We are outing today to Grandma's house (my mother's house) so I woke up early in the morning to prepare the foods for my 22mo lo for her to eat during the journey and Teatime later.

5 mins alphabets bread sticks 
(I am using the frozen batter that I kept on 19/5/2015)
Ingredients :
2 eggs
55g high protein flour 
90g fresh milk or full cream milk or water
35g unsalted butter 
2 tsp muscovado sugar or any sugar or omit

Steps :
1) sieve flour and set aside 
2) cook milk, sugar and butter in a wok with low heat until boiling
3) add in flour and stir quickly with a spatula until dough is form and non stick
4) off fire and remove dough from the wok, let it cool down
5) when hand can touch on dough,  add in egg 1 by egg, mix well 1 egg then only add in another 
6) once the dough turns into very wet dough, can stop adding egg (i use up all)
7) put the well mix batter into a plastic bag 
8) Pre heat oven at 190'C 
9) cut a 0.5 width hole at the edge of the plastic,  squeeze out alphabets on the non stick baking sheet laid on the baking tray

10) bake for 18mins or till light golden brown, turning halfway.


Homemade Mini Burger

Bread recipe
(I am using the half dough which I kept in freezer on 20/5/2015)

5 mins knead-less cheese bun
(Yield 16 buns)
Ingredients:
150g Milk
300g high protein flour
50g muscovado sugar or any sugar
1/8 tsp sea salt
20g milk powder
1 egg
1 tsp dry instant yeast
20g grated cheddar cheese
35g unsalted butter (room temperature) / olive oil

** some sesame seeds for topping

Steps:
1) mix all ingredients in a big bowl.
2) cover bowl with cling wrap, leave a small hole for air flow.
3) keep in the fridge 2 hours onwards, after 2 hours, you may take out and shape any time.
4) take out the wet dough and place on greased mat, I use some oil to grease my hands too.

5) divide dough into 16 equally small dough if intent to have round bun, then dip the surface onto sesame seeds

OR
Divide dough into 2 portions,  shape the dough into a big ball, then roll flat. Use knife to cross cut the flat dough into 8 triangles. cut a bit at the short end and roll both sides up to the sharp angle and a croissant shape is formed.

6) place the formed buns on the baking tray, put inside the oven (power off) and proof for 30mins. You may place a bowl of hot water inside the oven to help the proofing process better.
7) after 25mins, Remove the baking tray from the oven. Pre-heat the oven at 170'C for 5 mins.
8) Bake the buns for 16 mins or till light golden brown
9) brush some unsalted butter on the bread surface for better appearance.

Meat Patty
2 slices meat tenderloin
1/2 tsp liquid amino
1 tsp garlic powder
1 tsp honey
(Marinate the meat with the 3 ingredients for at least 30mins)

Mini Burger assembling
ingredients: meat patty, sesame bread, lettuce, tomato, cucumber, 1/8 tsp tomato sauce

Steps:
1) Pan fry the meat patty on a non stick pan (i did not use any oil)
2) cut the sesame bread into half
3) place the half base bread as 1st layer - lettuce - tomato sauce - cucumber - meat patty - tomato - top with half bread
