25/5/2015 Monday Blue gal

My 22mo lo was crying badly this morning when I left home to go to work.... What a Monday blue day for her... after sticking to mummy 24hours since Friday night.

This morning I only cooked 2 type of foods and 1 is frozen mantou cooked previously.

Breakfast: Steam pumpkin & black sesame mantou (my gal finished 1 and half of the mantou) and a cup of fresh milk ( i prepared walnut milk but she rejected and mil offered her fresh milk)

Lunch & Dinner: Mee sua & hard boiled egg with kunbu black fungus pork soup

Teatime: Banana cake & strawberry yogurt 










Mee sua with radish corn chicken soup
Meesua ~ cooked and rinse with ice cold water then add 1 tsp olive oil or grapeseed oil

Soup base ~ 1 chunk of pork tenderloin, 1/2 slice of organic kunbu, 1 pc of black fungus, 3-4 cups water,  Boil for 30-45mins.

Banana Cake
Ingredients
  • ½ Tbsp. butter for greasing the baking dish
  • 1 ⅔ cups (208 g) all-purpose flour
  • ½ tsp. salt
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ½ cup (113 g) butter, soften
  • ½ cup (100 g) sugar (I used 50g muscovado sugar only)
  • 2 large eggs, at room temperature
  • 1 Tbsp. cooking oil (vegetable, canola, grapeseed oil)
  • 1 tsp. vanilla extract
  • 4 ripe bananas
  • ½ - ⅔ cup raisins (optional)

Instructions
  1. Preheat oven to 350°F (175°C) and grease an 8” square baking dish with butter (bottom and sides).
  2. In a bowl, combine 1 ⅔ cup flour, ½ tsp salt, ½ tsp. baking soda, and ½ tsp. baking powder and whisk all together.
  3. In another bowl, combine ½ cup soften butter and ½ cup sugar and whisk well.
  4. Add 2 eggs, 1 Tbsp. oil, and 1 tsp. vanilla and beat with the whisk until well blended.
  5. Mash 3 bananas with a fork and mix into the egg mixture.
  6. Add the 1 ⅔ cups flour to the banana mixture and stir just until blended. Add raisins, if you prefer.
  7. Pour the batter into the prepared pan, spreading it evenly with the rubber spatula. Slice 1 banana thinly into rounds and decorate on top of the banana bread.
  8. Put the pan in the oven and bake at 350°F (175°C) until a toothpick inserted into the center of the bread comes out clean, about 1 hour. Remove the baking dish from the oven and let cool for 20 minutes. If you don't eat right away, wrap each slice or the whole cake with plastic wrap. Store at the cool place and enjoy within 2-3 days.
