21/5/2015 (Thur) Rice Crackers

Recently I couldn't wake up right after the alarm rang, still blurred and thought myself just wake up right after I off the alarm but once I look at the time.... 30 mins or more I lazy laid on the bed.....@@
I remembered last few weeks, there was a mummy asking whether any cookies recipe suitable for lo around 7mo, no teeth yet. So, I searched back my saved hard copy recipes and finally found 1 which is suitable for lo above 6 mo.

Breakfast : 5 min knead-less cheese bun  (baked yesterday, still soft today) & cherry tomatoes & Fresh milk

Lunch and dinner : Fried bear shape pasta with garlic and brown button mushroom

Teatime: Oil free, egg free, sugar free Rice Crackers & strawberry yogurt

5 mins knead-less cheese bun

Oil free, egg free, sugar free Rice Crackers 
Ingredients :
20g rice flour (粘米粉)
40g fresh milk / full cream milk 
40g cooked mashed potato
10g baby milk powder / full cream milk powder 

Steps:
1) mix rice flour and milk together, stir till no lumps.
2) cook the mixture in a non stick pan by low heat and keep stirring until a soft dough is form. (May add some milk if found too dry, or any excess dry flour)
3) mix the rice dough with the mashed potato and milk powder (for older lo, may add 1 tsp icing sugar at this time for mild sweet), knead the mixture till well combined.  You may use potato starch to dust the dough to avoid sticky. 
4) dust the dough, place it into a plastic bag, use a roller pin to roll it flat (roughly size 15cm×15cm)
5) cut and open the plastic, dust some potato starch again on the surface, use knife or cookies cutter to cut out shape.  (Dust your knife or cookies cutter to avoid stickiness)
6) carefully and gently hold the cut out flat dough and put on baking tray (if oven bake) or non stick pan (if pan fry)
7) bake at preheated oven of 160'C for 20mins (for younger babies) or 25mins above till light golden brown (for older babies)

OR just pan fry in a non stick pan till both sides are lightly browned 

Texture: soft melting texture


Stir Fried Bear shape Pasta
Ingredients :
Bear shape pasta or any types of pasta, cook as per instructions on the packaging,  set aside 

3 cloves garlic (sliced)
2-3 brown button mushroom (sliced)
Some garlic powder 
Some dried parsley 
Olive oil
Some sea salt to taste

Steps:
1) heat pan and add in olive oil
2) sautéed garlic till fragrance 
3) add in the mushrooms and stir fry a while
4) add in sea salt, garlic powder, parsley  and finally the cooked pasta. 
5) stir fry for another 1 min and done

  1. Haruko san, you cooked pasta in the morning for lunch and dinner. May I know how do you store it to bring to nanny? Reheat when eat? Won't lembik?

    1. I always cook the pasta in the following way:
      1) cook as per instruction
      2) drain away the water
      3) soak pasta in ICE COOL WATER for 30 seconds
      4) drain away cool water
      5) add 1-2 teaspoon grapeseed oil / olive in the pasta and mix well

      With this method, the pasta never lembik even after reheat(steaming)
