Woke up 5.15am this morning and prepared simple foods again but my 21mo lo still woke up early at 6.45am today and luckily i was in the cleaning stage (washing all utensils, pan, plates & containers) so I can nurse her before I go to work.
Breakfast: Banana Raisin Bread Pudding
Lunch and Dinner: Spaghetti with cream cheese sauce
Teatime: Potato Mini Bites
Banana Raisin Bread Pudding
Ingredients
1 banana
1 egg
some raisin
1/2 slice homemade bread / white bread
1/2 cup milk
1/2 slice cheese / some grated cheddar cheese
(Prepare 2 Ramekin bowls)
Steps:
1) cut bread into small cubes
2) slice banana
3) mix egg and milk, sieve through coffee strainer by 3 times
4) place the following ingredients into the bowls by sequence; bread, banana, bread, raisin, pour in the egg mixture.
5) sprinkle the cheese / place 1/4 slice of the cheese in each bowls
6) bake at pre-heated oven of 200'C for 15mins
Spaghetti with cream cheese sauce
Ingredients
Adequate quantity of spaghetti (cook as per instruction in the packaging)
15g cheddar cheese
25g cream cheese
1/4 pc carrot (diced)
8-10 sticks asparagus (cut in 1" size)
1 clove of garlic (sliced)
dash of pepper powder / italian herbs
1/2 cup full cream milk
Steps:
1) sauteed garlic with some grape seed oil
2) add in carrot and stir fry for 1 min
3) add in asparagus to stir fry also.
4) add in some water to cover the carrot, asparagus and close lid, shimmer for 5 mins
5) open lid, add in cream cheese, cheddar cheese, milk.
6) cook till cheese fully melted
7) add in dash of italian herbs and off fire
8) ready to serve with spaghetti or other pasta or rice
Potato Mini Bites (teeth-less baby is okay)
Texture: outer mild crunchy, inner super soft
Ingredients
45g all purpose flour (sieved)
95g cooked mashed potato
130ml fresh milk
10g grated cheddar cheese
5g unsalted butter
1 tsp sugar
Steps:
1) peel, slice, steam 1 medium size potato
2) mashed the potato while still hot
3) in a small pot/pan, pour in milk, butter, sugar & cheese, cook under low heat till all butter and cheese are melted, OFF Fire
4) add in mashed potato, stir well with chopsticks
5) pour in flour and stir quickly with chopsticks
6) the mixture will turn into sticky batter, scoop into piping bag, then squeeze out with flower nozzle
7) bake at preheated oven of 170'C for 15-20 mins or light golden brown
