12/5/2015 Tuesday (Day 1)Pain De Mie (BREAD)


Day 1 of hubby is on business trip... Thanks God that my 21mo lo was having a good sleep together with mummy (STTN from 9.30pm ~ 7am). Today i woke up 6am and prepared simple meals for my gal. The bread I served her as breakfast was baked on Sunday, so i just sliced and soaked in egg wash and pan fry it into French Toast. 

Breakfast: French Toast and fresh milk
Lunch and Dinner: Minced Pork Porridge with cauliflower and cherry tomatoes 
Teatime: Golden Pear Barley dessert 

Pain de mie  (庞多米)is a type of sliced, packaged bread. "Le pain" in French means "bread" or "loaf of bread", and "la mie" refers specifically to the soft part of bread, called the crumb. In English, pain de mie is most similar to pullman loafor regular sandwich bread. This bread has sugar in it, which makes it sweeter than most French breads. This bread is usually used for making sandwiches or for toasting.

Pain De Mie (BREAD)
Ingredients:
195g cold water / cold milk
30g unsalted butter
5g sea salt
30g sugar
12g milk powder
300g high protein flour
4g instant dry yeast

Manual Method: In a large bowl, combine the milk or water, butter, salt and sugar. Add the milk powder, flours and yeast, stirring till the dough starts to leave the sides of the bowl. Transfer the dough to a lightly greased surface, oil your hands, and knead it for 5 to 8 minutes, or until it's smooth and supple. Because of the relatively high fat content of this dough, it's a real pleasure to work with. Transfer the dough to a lightly greased bowl or dough-rising bucket, cover the bowl or bucket, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 1 1/2 hours, depending on the warmth of your kitchen.

Mixer Method: Combine the ingredients as above, using a flat beater paddle or beaters, then switch to the dough hook(s) and knead for 5 to 8 minutes. Transfer the dough to a lightly greased bowl or dough-rising bucket, cover the bowl or bucket, and allow the dough to rise till doubled in bulk, 1 to 2 hours.

Bread Machine Method: Place all of the ingredients into the pan of your machine, program the machine for Manual or Dough, and press Start. When the cycle is finished, remove the dough and proceed as follows.

Lightly grease a bread pan. Transfer the risen dough to a lightly greased work surface, divide dough into 3 portions, roll it flat and become oval shape, roll it up and fit it into the pan. Cover the pan with lightly greased plastic wrap, and allow the dough to rise until it's just below the lip of the pan, 45 minutes to 1 hour, depending on the warmth of your kitchen (it may rise even more slowly in a cool kitchen; don't worry, this long rise will give it great flavor).

Bake the bread for 40 minutes. Remove the bread from the oven, and turn it out of the pan onto a rack to cool completely.


French Toast
Ingredients
2 slices of Pain de mie / any breads
1 egg
1 tbsp grated cheddar cheese
1 tbsp fresh milk
1/4 tsp honey

Steps:
1) Cracks egg into a bowl
2) Add in cheese, milk & honey into egg, mix well
3) dip in bread slice in the egg mixture
4) heat pan with some butter or oil, pa fry till both sides golden brown


Minced Pork Porridge
Ingredients
3 tbsp mix grains rice (pre-soak overnight)
2-3 tbsp minced pork
6 cherry tomatoes
some cauliflowers
adequate water / soup stock
1/2 tsp liquid amino (optional)

Cook in slow cooker for 2 hours.


Golden Pear Barley Dessert
Ingredients
1/2 big Golden Pear
10 red dates
2 dried winter melon strips
1 tbsp chinese barley (Pre-soak overnight)
4-5 bowls water

Steps:
1) Cook water in a pot with the chinese barley
2) dice the golden pear into small bite size
3) dice the dried winter melon
4) add in the pear, red dates & winter melon into the cooking barley
5) cook under small fire for at least 45mins
6) can be served warm or cold
