throwback 6/12/2014 Saturday (16 mo)

Happy Saturday!!
Today i bake sesame biscuit for my 16mo lo as snack when we on the way back to my mother's house.
Breakfast she has apple celery juice and baked plain doughnut.




Sesame biscuit (recipe by Carol)
Ingredients:
Low protein flour 150g
Unsalted butter 25g
Sugar 30g
Salt 1tsp (i reduced to 1/4tsp)
1 egg
Milk 20g
Baking powder 1/2 tsp
Roasted white or black sesame 20g

Steps:
1) sift flour, baking powder and salt.
2) rub the flour with butter till combine like bread crumbs
3) add in sugar and sesame and mix well.
4) add in egg and milk and mix to form a soft dough. Do not over knead.
5) wrap with a cling wrap n let rest for 30mins
6) preheat oven at 180°c then roll the dough into thin layer about 0.2cm
7) cut into prefer shape by knife or cookies cutter then place on baking sheet
8) bake for 12-15 mins or till golden brown

Bake doughnuts
Ingredients

½ cup + 2 Tbsp warm milk
1 tsp active dry yeast
1 Tbsp butter
50g sugar
1 egg
350g cup Bread flour
1 tsp cinnamon powder 
pinch of nutmeg 

CHOCOLATE DIP FROSTING
100 g any chocolate (at least 40% cacao)
5 tbsp of milk. 

Instructions

Mix all dry ingredients and set aside. 

In a bowl, cream sugar, and butter. Add egg and mix until fluffy.Add the flour mixture and slowly add the warm milk until dough if formed.

Dump dough in the counter and knead a few times for about 10minutes, adding flour or milk if needed. It should be soft, smooth and only slightly sticky. Do not overflour. Form into a ball and place in a greased bowl and cover with cloth or towel and let rise for an hour or until it has doubled its size.

Punch down the dough and roll it out on a floured counter up to about half an inch thick. Cut out circles using a doughnut or round cookie cutter. (Im using drinking cup) Transfer the cut doughnuts into the baking sheet lined. Cover the tray and let them rise the second time for about 45 minutes. ( i let it rest in my oven ) You can cut smaller circles from the leftover dough and bake them with the holes as is or roll them all together one more time to make more doughnuts.

Bake the doughnuts at 375°F/180°C for
10 minutes. Bottom should only be slightly browned while top is still pale. This makes it more chewy.While doughnuts are baking, prepare the dip frosting. 

Combine the chocolate and milk in a small bowl. Heat in the microwave or (boiling cooking methods) for 10 seconds and then stir until the chocolate melts completely. U can add more milk if too chuncky and thick but not too watery.Heat for another 5-10 seconds if not warm enough but not more. 

Once the doughnuts and dips have cooled down to room temperature, dip the top half of the doughnut in the frosting then put them back in a tray as they might drip a bit. Design or top with whatever or however you fancy but be quick before the frosting starts to set.
