Yesterday took out a bundle of my recipes printouts in the house and brought them to office and thinking to save them all in my blog for easy reference and searching. By looking at the printouts and I was surprised how did I manage to complete them all... Time, I need some time to compile them into different categories so that I don't need to flip the printouts each time to search for certain recipe. So, I have completed one category which is "BREAD"... ^.^

Breakfast: Potato tart frittata and fresh milk

Lunch and Dinner: Silver fish fried rice 

Teatime: Red Bean pancake and Apple Juice



Potato Tart Frittata (By Wong Yen Li)
Ingredients:
tart skin~
95g cooked & mashed potato
10g unsalted butter
10-15g all purpose flour (depends on the wetness of the mashed potato)

filling~
(basically you can put any vegetables that your lo loves)
solid~
Some green zuchinni (diced in small size)
some carrot (diced in small size)
some brown button mushroom (diced in small size)
liquid~
1 egg
1 tbsp heavy cream / whipped cream
3 tbsp milk
10g grated cheddar cheese
dash of pepper powder

Steps:
1) cook 1 medium size potato in boiling water (with skin on) for 15mins / you may peel and slice then steam for 10mins
2) peel and weight out the quantity required and mash it with butter while it is still hot
3) add in flour and mix well, a very soft dough shall be formed
4) divide dough into 5 portions (roughly 23g each)
5) put into silicone cup or egg tart mould and press out evenly to form the tart skin
6) bake at preheated oven of 180'C for 15 mins
7) while baking the tart skin, cut the vegetables into small cubes size.
8) crack egg into a bowl, add in cream, milk, pepper powder and cheese, stir well.
9) remove the tart skin from oven, put in each type solid ingredients into the cups, then pour in the egg mixture
10) return them into oven and continue baking for another 10-15 mins or light golden brown




Silver Fish Fried Rice
Ingredients:
3-4 tbsp mix grains rice (cook as usual)
15g dried silver fish
1 hard boiled egg (you may scramble egg)
some carrot (shredded) 
2 cloves garlic (sliced)
1 brown button mushroom (diced)
some green zuchinni (diced)
dash of pepper powder

Steps:
1) soak and wash silver for 30mins to reduce the saltiness, set aside
2) sauteed garlic and some vege oil till fragrant
3) add in silver fish and stir fry till light golden brown
4) add in mushroom, zucchini, carrot, stir fry for a while
5) add in rice and egg, stir fry a while and add in some pepper powder
6) off fire and done



Red Bean Pancake
Ingredients
1/3 cup precooked red bean
1/3 milk
1/2 cup all purpose flour
1 egg
1 tbsp muscovado sugar
1 tsp grape seed oil
1/2 tsp aluminum free baking powder

Steps:
Just mix well all the ingredients and scoop by small teaspoon of each batter on a non stick pan. pan fry with small small fire, close lid, turn over when pancake surface start forming holes. pan fry another side till golden brown. 


Steamed Apple Juice
Ingredients:
1 Fuji Apple
1 tsp honey 
1/2 cup drinking water

Step:
1) peel and cut the apple
2) steam for 10-15mins
3) blend the steamed apple with water
4) add honey and stir well
5) ready to serve 

p/s: the steaming process is to stop the apple from oxidation as the juice is not served immdiately
