2/3/2015 Monday : Meals of the day

Hi dear all~ What a busy day on this Monday blue...
Hubby is on business trip again, so I had to use minimum time in cooking to prevent my 19mo lo wakes up crying badly to look for mummy as during my cooking time she is alone in the bedroom.
I woke up 5am but DL and change my lo's diaper then made her sleep again only start cooking at 6am.

Breakfast : Apple cheese pancake (eggless) and Tomato juice (FB Link)
Apple cheese pancake + tomato juice

Ingredients
4 tbsp all purpose flour

4 tbsp milk 

1/2 tbsp chiaseed (presoak in 2 tbsp water)
1/2 grated apple ( i blend the apple with the milk instead)
1 tsp muscovado sugar
1/2 tsp aluminum free baking powder
1" cube cheddar cheese (grated)

steps:
1) blend apple with milk
2) soak chiaseed with 2 tbsp water for 15mins
3) mix all the dry & wet ingredients together.
2) scoop 1 tsp onto a greased frying pan. place the batter till no more space.
3) close lid for 1 min
4) turn over and pan fry another side till golden brown.

Tomato Apple Juice
5-6 organic cherry tomatoes
1/2 tsp honey
1/2 cup water

Blend all together, then sieve by a strainer... nice healthy yummy drinks is ready ~~
Lunch and Dinner : pork scallop porridge
Teatime : homemade yogurt bread & honey lemon drinks

Yoghurt Bread 
Ingredients:
200g farm fresh plain yoghurt
55g muscovado sugar
4g instant dry yeast
4g salt ( i put pinch of salt only)
50g unsalted butter
400g bread flour
Made by TESCO bread maker function 1, loaf size 2.0lbs, light crust. p/s: can off the bread maker 15mins before the timer finish, and take out the bread.
