APOM
Ingredients:
250 ml warm water
50 g sugar
½ tsp instant yeast
250 g rice flour
1/4 tsp salt
125 ml thick coconut milk
Oil for greasing pan (i didn't use)
Steps:
1) In a bowl, add in sugar and warm water (40'C), stir till sugar is dissolved.
2) add in yeast and stir a bit, let is set aside for 15mins.
3) add in rice flour, salt and coconut milk into the yeast liquid and stir until a smooth, thin batter is formed. Cover bowl and put in warm place for about 1- 1 ½ hours or until mixture is well risen and about double in volume. (i put inside oven with a bowl of hot water, change the hot water when it has cooled down)
4) Place a small non-stick frying pan over medium-low heat and grease very lightly with a dab of oil. Place about half a cup of batter in the centre of the pan. Using the back of a spoon, thin down the edge of the pancake but leave the middle untouched (so that you get a crisp edge and a thicker, spongier centre).
5) Cover the apom with the lid of a saucepan and cook for 2-3 minutes. Open lid and remove cooked apom (it is only cooked on one side).
Are you using fresh coconut milk or tin? May i know what brand?
