9/6/2015 Happy Tuesday


Good Tuesday dear all..

Last weekend I was learning how to make Chinese Scallion Pancake, followed the recipe shared by my best friend. So, I was thinking to change the filling from scallion to apple. 

Crossover of Apple Pie filling + Asian Roti Canai = ??????
let's have a look!

Breakfast: Apple Roti Canai/ Apple Pancake & fresh milk

Lunch and Dinner: Bear Pasta with tomato sauce and Guava Corn soup

Teatime: Scallion crackers and honey dew yogurt drinks



Dough (Roti Canai)
(Ratio is always 1:3
 1 warm water : 3 flour)

1 cup organic plain flour
1/3 warm water (+ - 40'C)

Steps:
1) add warm water into flour and knead by hand
2) continue kneading until the dough is formed and hand is clean, bowl is clean, dough is smooth
3) put the dough in the bowl and cover by wet cloth / cling wrap / lid
4) let the dough REST at least 30 mins

Apple Filling
Ingredients:
1 organic apple
2 tbsp organic honey
1/4 tsp cinnamon
dash of nutmeg powder
1/8 cup water
1/2 tsp corn flour + 2 tbsp water (mix well)

Steps:
1) peel, cut, dice the apple into tiny cubes
2) pour apple cubes into a sauce pan, add in water, cook for 5 mins
3) add in honey, cinnamon, nutmeg, cook till apple turns soft
4) remove sauce pan from fire, stir in the corn flour mixture
5) return to the fire and cook till boiling
6) done

After 30 mins................or more (if you are not free to make the roti canai)

Apple Roti Canai / Apple Pancake

Steps:
1) divide dough into 8 portions
2) roll each small dough into ball, then roll flat (2-3mm thickness)
3) brush some olive oil/ vege oil/melted butter on the flat dough
4) scoope 1 spoon of the apple filling and spread over the flat dough
5) roll up the flat dough from the bottom until the end
6) hold both ends, pull and slightly bounce it on the table, (your dough shall become double longer in length)
7) roll the long dough from 1 end to another (shall look like photo "left 3" above)
8) rest dough for 10 mins more ( i keep dough individually in wrap and put in the fridge for next day cooking)
9) grease pan with some oil, press the dough flat again (shall look like photo "right 3" above), transfer flat dough in the pan, pan fry till both sides golden brown (photo 2 above)
10) clap the pancake while still hot to form puffy roti canai. (i put 2 handkies in 2 plastic, then slot my hand in the plastic bag and clap...LOL as I can't do it like the Roti Canai maker out there) 




Bear shape Pasta with tomato sauce

Pasta
Ingredients :
Bear Shape pasta (or any type of pasta)
Cook as per packaging instruction, soak in cold icy water for 30 seconds, drain, set aside. 


Tomato sauce
Ingredients:   (A)      
12 pcs cherry tomatoes
6 pcs black seedless grape
1 orange mini bell pepper 
2 inches zucchini
1 shallot
1-2 tbsp grated cheese
dash of Italian herbs

Steps:
1) Blend grapes, tomatoes and pepper together till smooth
2) Heat pan with olive oil, sauteed shallot till fragrant
3) add in the zucchini stir fry for a while
4) pour in the blended puree and 1/2 cup water, boil for 3 mins.
4) add in the grated bega cheese and cook till cheese melted.
5) add in some Italian herbs
6) off fire and done.


Guava Corn Soup
Ingredients:
1 big guava
1 organic sweet corn
2 chicken tights
1-2 tbsp Goji berries

Steps:
1) Blanc the chicken tights
2) add 2 litres water in a pot, put in all ingredients except goji berries
3) Boil in high heat for 10mins, then turn to small fire and boil for 1.5 hours or more
4) Off fire then add in goji berries
5) add dash of pepper powder and ready to serve warm

p/s: Guave is one of the fruits that contains high IRON.... ^.^




Scallion Crackers
Ingredients:
50g cake flour
pinch of salt
1/2 tsp muscovado sugar
8g finely cut green onion
1 tsp white sesame seeds
1 tbsp olive oil / vege oil
1 tbsp water

Steps:
1) Mix the first 5 ingredients together
2) add in oil & water, gently knead and form a soft dough (If too dry, may add a bit water)
3) put the dough in a plastic bag / zip lock bag (roughly 15cm X 15cm size)
4) roll the dough in the bag to thickness about 2mm
5) cut the sides of the plastic, use knife to cut the flat dough into desired size
6) transfer the cookies on the baking tray which laid with parchment paper or non stick baking sheet
7) use fork to poke some holes on each cookies
8) bake at preheated oven of 150'C for 20mins, OFF power, then let it sit in the oven for another 10mins before removing from oven.

蔥油薄脆餅

材料:
50克低筋粉
少許鹽
1/2茶匙黑糖
8克 細切蔥花
1茶匙 白芝麻
1湯匙 橄欖油/有機蔬油
1湯匙 水

步驟:
1 )混合首5種材料在一個碗
2 )加入油和水,輕輕地揉和成軟麵團(如太乾,可以加點水)
3 )把它放到一個塑料袋/拉鍊鎖袋(約15厘米X 15厘米的大小)
4 )將麵團擀成薄餅皮(厚度2mm左右)
5 )剪开膠袋的兩側,然后,用刀切餅皮成想要的大小
6 )小心把餅皮擺在烤盤上(鋪上不粘烤纸的)
7) 用叉子在餅皮上刺上小孔
8)再放到已經預熱的烤箱, 烤20分鐘,然後關掉電源,讓它在烤箱裡待10分鐘再取出。
