Monday is a blue day for me because usually I have to wake up 4am to iron hubby's cloths... Finished irong at 5.15am then only I started to prepare meals for my gal....

My 22mo lo is boring with pancakes....so, today i made pancake rolls in the sticks...hope this trick can make her feel fresh...hahaha...

Breakfast: Banana Pancake rolls in the sticks & fresh milk

Lunch & Dinner: Fusilli with creamy corn sauce

Teatime: Steam Yogurt & sesame Bun/Mantou & strawberry yogurt





Famous Banana Pancake from the internet
1 banana & 2 eggs (no flour & no sugar)

Ingredients:
1 egg
1/2 banana

Steps: Blend the 2 ingredients till smooth, pan fry with little oil on a non stick pan till both sides light golden brown. Cut the pancake into 5-6 pcs rectangular shape. Roll each slice and push into a bamboo skewer.

Fusilli with creamy corn sauce

Pasta
Ingredients :
1 bowl of fussilli,  cook as per instructions on the packaging,  drain dry, soak in ice cold water for 30 seconds,  drain dry, add 1-2 tsp olive oil or grape seed oil and mix well 

Creamy Corn Sauce
Ingredients :
1 organic sweet corn (remove the kernel)
8 asparagus (diced)
1/2 pc Babybel soft cheese
1/2 cup water
1 clove garlic (sliced)

Steps:
1) Blend the sweet corn with some water till smooth. Sieve the corn puree to have smoother texture.
2) heat pan and add in some olive oil,  sautéed the garlic till fragrant. 
3) add asparagus and stir fry for 1 min
4) add in corn puree and water, shimmer till asparagus turned tender.
5) add in cheese, cook till melted.
6) add in dash of pepper powder,  Off Fire.. done

Using this soft cheese for cooking this time
Steam Yogurt/Black Sesame Bun (Mantou)
Ingredients
Plain Yogurt 40g
Water/milk 50g (add more if too dry, i was adding more during kneading)20g muscovado
1/2 tsp Instant dry yeast
1/2 tsp Aluminum free baking powder
150g Pao flour
1 tbsp Grape seed Oil 

For black layer:
2 tbsp black sesame powder 
(to be added after 1st proofing to the half dough)

Steps:
1) use bread maker to knead the dough by function no 8 of my tesco bm. Beat 20mins, off machine. 

((For busy FTWM, If you wish to prepare for next morning use, after Step 1, put the dough in a bowl and cover by cling wrap, leave a small hole for air flow, put in the fridge overnight.))

2 ) Proof for 45mins. ((For cold dough, take out dough from the fridge, rest for 10mins, press out all air.))


3a) for black colour dough: P
ress out all air, take 1/2 of the dough and mix with the black sesame powder, knead till well combined, divide into 8 equally portions.

3b) for plain colour dough: Press out air, divide the 1/2 of the dough into 8 equally portions.

4a) For Fish shape mantou:
Roll & press a black dough into oval shape, roll a plain dough into football and place on the oval flat dough. Use knife to cut 5 lines (as per photo shown), Lift up the lines and lay cross over each others. At the fish tail, just cut lines as shown in photo too.

4b) For Flower shape mantou:
Roll colour A into ball shape, then press flat. Roll colour B into ball shape too. Wrap the B with A. Press the combined ball flat, then use knife to do 8 cuts on the flat dough (as photo shown). Twist all cuts to the same side and expose the two tune colours.

5) place on steaming rack, proof for another 20-30mins or double the size.

6) steam at medium high heat for 10mins. Open a little bit of the lid cover, wait for at least 5 mins only open the whole cover.
