My 22mo lo was requesting Panda Mantou last night but my making skill is still very lousy and I couldn't get the right shape...... (sigh~)

Breakfast: Black sesame Mantou, cucumber salad & Fresh milk

Lunch : Steam chicken drumstick, guava soup and brown rice
Dinner : stir fry lady fingers with white bait, guava soup and brown rice 

Teatime: Sweet potato flower bites and dragon fruit juice



Cucumber Salad
Ingredients
1 japanese cucumber
1 tsp castor sugar
pinch of salt
1 clove garlic
1/2 tsp rice vinegar / apple vinegar

Steps:
1) cut away both ends of the cucumber, Pound the Cucumber. then cut into sticks. 
2) rub the cucumber with sugar
3) then add in salt and continue rubbing
4) add in crushed garlic & vinegar
5) put in the fridge and ready to serve cool



Steam Black Sesame Bun (Mantou)
Ingredients

3 tbsp Milk
(add more if too dry, i was adding more during kneading)
2 tsp muscovado sugar

1/4 tsp Instant dry yeast
1/4 tsp Aluminum free baking powder
1 cup Pao flour
1/2 tbsp Grape seed Oil 
2 tbsp black sesame powder 


Steps:
1) Mix all ingredients in a big bowl and knead by hand. Knead for 15-20mins until the dough is formed and smooth, no more stickness on hand, on the bowl.

((For busy FTWM, If you wish to prepare for next morning use, after Step 1, put the dough in a bowl and cover by cling wrap, leave a small hole for air flow, put in the fridge overnight.))

2 ) Proof for 45mins. ((For cold dough, take out dough from the fridge, rest for 10mins, press out all air.))

3) Press out all air, rest for 10 mins. Roll the dough flat in rectangular shape then roll like a swiss roll. Cut into 4 or 5 equally size mantou.

5) place on steaming rack, proof for another 20-30mins or double the size.

6) steam at medium high heat for 10mins. Open a little bit of the lid cover, wait for at least 5 mins only open the whole cover.






Today serving the remainder soup of yesterday
Guava Corn Soup
Ingredients:
1 big guava
1 organic sweet corn
2 chicken tights
1-2 tbsp Goji berries

Steps:
1) Blanc the chicken tights
2) add 2 litres water in a pot, put in all ingredients except goji berries
3) Boil in high heat for 10mins, then turn to small fire and boil for 1.5 hours or more
4) Off fire then add in goji berries
5) add dash of pepper powder and ready to serve warm


Steam chicken drumstick
Ingredients:
1/2 ~ 1 orange
1 - 2 chicken drumstick
some wolf berries / goji berries
1 small piece of ginger

Steps:
1) Marinate chicken drumstick with the orang juice at least 30mins
2) add in other ingredients and steam for 15mins


Stir fry lady fingers
Ingredients:
2-3 lady fingers (cut into thick slices)
1 tbsp white baits (wash and soak)
dash of pepper powder
1 clove garlic

Steps:
1) heat pan, add some olive oil and Sautee garlic till fragrant
2) add in the white baits, stir fry till light golden brown
3) add in lady fingers, stir fry for a while
4) pour in some water and shimmer till lady fingers turns soft
5) add in dash of pepper powder, off fire.
6) done






Sweet potato flower bites 
(Flourless, egg-less and sugarless)

Ingredients :
100g cooked mashed sweet potato 
5g unsalted butter OR Grated cheddar cheese

Steps:
1) add in butter/cheese into mashed sweet potato while it's still hot, mix well
2) put the mixture into a piping bag ((using desired shape nozzle))
3) squeeze out each flower on the baking tray which laid with parchment paper or nonstick baking sheet 
4) bake at pre-heated oven of 180'C for 1 5-10mins
5) turning the tray in and out half way baking
