4/6/2015 Thursday meals

This morning happened something very funny... When I woke up in the morning, i found that my 22mo lo was sleeping on my tummy and between my tights which resulted I dare not to move... LOL

As today hubby is on business trip, I have cooked and prepared 2 foods last night, there are Layer Kuih and batter of sweet potato bits. It's really save lots of my time..

Breakfast: Layer Kuih, golden pear, carrot and fresh milk

Lunch & Dinner: Macaroni in spinach cream cheese sauce

Teatime: Sweet Potato Flower Bites (2 ingredients version) & Golden Pear drinks




Layer Kuih
Ingredients: (other colours suggestion: purple sweet potato, dragon fruit, milk, pandan leave, brown sugar, etc)

**White Colour
45g Rice flour
15ml coconut milk
80ml corn puree + water
1 tbsp sugar

**Purple/Blue Colour (other substitution: purple sweet potato,
40g Rice flour
90ml Blueberry puree (2 tbsp) + water
1 tbsp sugar

**Yellow Colour (other substitution: carrot)
40g Rice flour
90ml Pumpkin puree (2 tbsp) + water

Steps:
1. Stir all the materials in each different colours till well mixed.
2. Grease the pan then put into the steamer and steam for 5 minutes. Stir well and pour a scoop of the White batter into the pan, cover and steam for 3 minutes, open lid and get ready for 2nd layer for Purple colour, stir well before pouring a scoop of Purple batter into the pan, repeat the same steps until all batter finished. For final layer, cover the pan with a foil cover your lid with a cloth to avoid water dripping onto the surface and affect the appearance. Steam for 10 mins.
3. Remove the cake to cool for 4 hours or more and cut out with a plastic knife to avoid sticking if use steel knife.

p/s: Must stir well the batter each time before pouring into the pan to avoid flour stagnant at the bottom.






Macaroni with spinach cream cheese sauce
Ingredients
Adequate quantity of macaroni (cook as per instruction in the packaging)

15g cheddar cheese
25g cream cheese
1 bowl baby spinach (or spinach)
2" zucchini (diced)
2 clove of garlic (sliced)
dash of pepper powder 
some dried parsley
1 cup water

Steps:
1) Blend baby spinach and zucchini with water till smooth. (if you prefer smoother texture, you may sieve it with a strainer)
2) sauteed garlic with some grape seed oil till fragrant
3) pour in (1), cheese and cream cheese and cook till boiling
4) cook till cheese fully melted, add in the pepper and parsley
7) off fire
8) ready to serve with macaroni or other pasta or rice


Sweet potato flower bites 
(Flourless, egg-less and sugarless)

Ingredients :
100g cooked mashed sweet potato 
5g unsalted butter

Steps:
1) add in butter into mashed sweet potato while it's still hot
(If using cool down sweet potato,  just use melted butter is fine), mix well
2) put the mixture into a piping bag ((using desired shape nozzle))
3) squeeze out each flower on the baking tray which laid with parchment paper or nonstick baking sheet 
4) bake at pre-heated oven of 180'C for 1 5-10mins
5) turning the tray in and out half way baking
