Hi dear all...Finally I am able continuing my blog writting today after busying in the office for the past 2 days. Yesterday I was told by MIL that my 22.5mo lo had a mouth ulcer on her upper lip. This is the first time she has mouth ulcer since born. So, today's meals are mainly cooked by steaming and no heaty types.

Breakfast: Apple sweet potato balls + fruits + Pomegranate Juice

Lunch and Dinner: Baby Spinach Pork Porridge withGoji Berries 

Teatime: Steam Apple Cheese cake and Pear Barley drinks

Apple sweet potato balls (suitable for 6mo above)
(Vegan Japanese Dessert "Sweet potato with apple kinton" )
Oil Free, Sugar Free, Gluten Free & Non-Baked healthy snack
Ingredients:
1 japanese sweet potato
1/4 organic red apple

Steps:
1) cook the whole sweet potato with skin in boiling water for 15-20mins or till soft. or you can peel, slice and steam till soft.
2) cut and dice the apple into very tiny size (chop finely also can). Cook it under small fire with 1-2 tbsp water until tender.
3) mash the sweet potato while still hot. mix in the cooked apple.
4) divide into 6-8 equally portions then roll them into balls.
5) place each balls on a mini paper cup and ready to serve.

甜薯蘋果球
(適用於6mo以上,無油,無糖,無麩質和非烤健康零食)

材料:
1条日本番薯
1/4颗有機紅蘋果

做法:
1 )把番薯连皮在沸水煮15-20分钟或至軟。(也可以剝皮,切片蒸軟)
2 )把蘋果去皮切成小颗粒(切碎也可以) 。加入1-2汤匙水,用小火煮至软。
3 )趁熱把番薯压成泥后拌入煮熟的蘋果。
4 )把薯团分為6-8份,然後把它們揉成球状。
5 )將每個薯球放进小紙杯即可。



Baby Spinach pork porridge with goji berries
Ingredients:
3 tbsp pre-soaked mix grains rice
50-60g pork tenderloin (sliced)
1 bowl of baby spinach (cut finely)
1 tbsp organic goji berries
dash of pepper powder

Steps:
1) cook pork with 3 bowls of water for 30mins
2) add in rice and cook for another 15 mins or till soft
3) add in goji berries, spinach and dash of pepper powder and cook for another 5 mins.
4) off fire and ready to serve warm.

p/s: in my case, as  I cook the porridge early in the morning, so i did not add in the spinach first. i keep the spinach in a covered container and place in the fridge, When my MIL reheat the porridge, she will add in the baby spinach and cook till boiling. 




Steam Apple Cream Cheese Cake
Ingredients:

1/2 organic red apple
30g cream cheese
25g icing sugar
1 tbsp milk 
1 tbsp olive oil

1 egg
45g organic self-raising flour
1/4 tsp baking powder


Steps:
1) roughly blend the apple with milk (pause blend for few seconds only) set aside.

2)  In a mixing bowl, Cream the cream cheese with sugar by using spatula to press; mix till well combined
3)  add in egg and beat till well combined. Then add in the apple and oil. stir well.

4)  Sieve in flour mixture (flour & baking powder) and fold gently
4)  scoop the batter into cupcake moulds and Steam at medium heat for 10-12 mins



蘋果奶油芝士蛋糕

材料:
1/2粒有機紅蘋果
30克奶油乳酪
25克糖粉
1湯匙牛奶
1湯匙橄欖油
1個雞蛋
45克有機自發麵粉
1/4茶匙泡打粉


做法:

1 )用攪拌機把牛奶和蘋果打成泥。
2 )在攪拌碗把奶油乳酪與糖用抹刀按壓拌勻。
3 )加入雞蛋,攪拌均勻。然後加入在蘋果和油。攪勻。
4 )篩入自發麵粉和泡打粉,輕柔地拌勻即可。
4 )舀麵糊入蛋糕模具和用中火蒸10-12分鐘。



Golden Pear Barley Drinks
Ingredients
1/3 pack chinese barley
1/2 golden pear (diced finely)
1 honey date
3 cups hot water

Cook in slow cooker with auto mode for at least 2 hours. ready to serve warm
