throw back 26/12/2014 Friday


Start being temporary stay at home mom for 11days as my baby caretaker is away and i need to on long leave. I still have to wake up 4am to do some house works and prepare my 17mo lo's foods as i can hardly cook if she is sticking to me.
Today's lunch is rice ball and 100% self feed by my lo and she finished all in 5 mins!!! So happy to see her enjoying her food!! ^.^
Breakfast: baked egg plant and egg roll, orange juice and peas and corn
Lunch: Cheesy egg ham rice ball, chicken soup and cooked celery and radish and carrot

Cheesy Ham Rice Ball
Fry the egg with some ham. 
Then chopped them into very fine. 
Mix with same portion of cooked hot rice and some roasted black sesame. 
Scoop 1 tsp of the mixture and squeeze into ball shape while its still hot.

Baked Eggplant
Ingredients:
1 small eggplant
some cheddar cheese ( i used bega extra tasty)
some dried parsley
some olive oil

Steps:
1) slice the eggplant into 5-8mm thickness, brush some olive on surface
2) bake at preheated oven of 200'C for 5 mins
3) remove from oven, shred the cheese on top of each eggplant slice
4) continue baking for another 10mins or cheese melted and turn lightly brown
