throw back 19/12/2014 Friday

Can mummies imaging that carrying a 11kg weight while preparing food? My 16.5 mo lo was waking up at 6am and I have no enough time to make her sleep again as my food still cooking half way... As hubby is on business trip and i have no choice to carry her with carrier while cooking at the same time...
Breakfast: Baby Roti Canai + hard boiled egg + mango strawberry yogurt
Lunch : kunbu chicken porridge + pomegranate
Teatime: banana cake + mango strawberry yogurt
My lo took half piece of roti canai while i was carrying her and some pomegranate.
(Feel my shoulder is stiff and tired... Wooo... Wooo...)

Baby Roti Canai
Ingrediants:
250g all purpose flour/medium protein flour
1 egg
1 tbsp sugar/muscovado
15gm unsalted butter
1/8 tsp salt (can omit for lo below 1yo)
100ml water
some olive oil for pan frying

steps: (i use bread maker)
1) put all the above ingredients into bread maker and on "dough" function for 20mins. If using hand knead, knead till no more sticky and smooth. (if dough is too dry, add water; if dough is too wet, add flour)

2) let it rest 20mins by cover with damp cloth/cling wrap (for hand knead); just let it sit inside the breadmaker and switch off the power.

3) divide dough into 50g each and brush some butter or vege oil and cover with cling wrap. for lo maybe 30g each dough. Rest dough at least 6 hour or overnight.

4) put some oil on the table top, take a small dough and press it till flat and lightly stretch it and do as the roti canai maker to flip it... (haha..i cant do it...i just stretch it as far as i can)

5) pan fry it with some olive oil till both sides golden brown



Mango strawberry yogurt
Ingredients:
1/2 mango
2 strawberries
2 tbsp greek style natural yogurt

blend together till smooth
i tasted it and its super yummy as the sweet mango has neutralized the sourness of the yogurt...


Banana Cake 

Ingredients (A)
100gm flour
1 tsp baking powder 
20gm sugar 

Ingredients (B)
1 egg
100gm banana puree
60ml grapeseed oil
60ml buttermilk (i pour 60ml milk into 1 tsp lemon juice, and let it stand for 5mins)

Steps:
1) Sieve flour and baking powder
2) Mix with sugar
3) Mix (B) together
4) Combine (A) and (B) to s smooth batter
5) Pour batter into baking mould / baking tray
6) Bake at 170’C for 15-20 mins or insert a bamboo stick and comes out clean.


Kunbu Chicken Porridge
Ingredients:
1/2 chicken breast
1 inch carrot
goji berries
kunbu
3 tbsp mix grain rice
water
Cook in the slow cooker for 1-2 hours
