throw back 12/12/2014 Friday

Good Morning and Happy Friday~
This morning i was testing to do some christmas cookies as door gift for the kids/toddlers (baby version is without the candy) and i failed on the icing decoration part. Never mind, tomorrow i will try again.


Breakfast: sweet potato millet Ring 
(super crunchy today! Mummy ate 6-7pcs just now) and honey dew yogurt drink, steam potato and few pcs of butter cookies
Steam sweet potato : cooked millet (Ratio 1:1)
Blend with little bit water till smooth.
Put into a plastic bag and cut a small hole at the edge.
Squeeze out the mixture and form a ring or stick onto a nonstick baking sheet.
bake at preheat oven 170'C for 15-20 mins or till it turns light golden brown.

Lunch: macaroni in mushroom cheese sauce
Ingredients: 
1 cooked potato, 1 shitake mushroom (diced), 1 shallot, 1/2 slice of ham (can omit for lo below 1 yo or replace by minced meat), 1/2 egg, grated cheddar cheese 1/3 cup, milk 1/3 cup, water 1 cup.
1) Sauteed shallot with olive oil or unsalted butter.
2) add in ham, mushroom and stir fry a while.
3) add in egg and cook like scrumble egg.
4) add in the potato and mash it, add in water and shimmer for 3 mins.
5) add in milk and cheese.
6) dash of italian herbs.
7) cook till cheese is melted then off fire
Teatime: cheesy carrot bites (baked yesterday and lo had finished half) and honey dew yogurt drink
Cheesy Carrot Bites
Ingredients:
Cake flour 75g
Unsalted butter 25g
Grated cheddar cheese 30g
Muscovado sugar 2 tsp
Milk 1 tsp
Shredded carrot 28g
Steps:
1) mix flour with butter. Use hand to scrub till like bread crumbs.
2) add in cheese and sugar, continue mix by hand
3) add in carrot and mix well
4) add in milk and knead to form a soft dough. The dough shall not be sticky.
5) roll dough flat on a dusted flour table top, use cookies cutter to cut out the cookie
6) place on non stick baking sheet
7) bake at preheat oven 180°C for 15-18mins or till light golden brown

Stained Glass Cookies
Butter Cookies recipe
35g Unsalted butter (room temp)

15 Icing Sugar
13g Egg
65-70g Cake flour (sieved)
5g Milk Powder
1/4tsp Baking powder

FOX Candy 10-15pcs (I cut the candy into half)

Steps:
1. Beat Butter and icing sugar with electrical mixer till combine then add in agg, beat again till combine. (total I spent 3 mins), add in the flour, baking powder & milk powder, fold in by a spatula then use hand to form a soft dough.
2. Dust your table top with some flour, roll the dough into 0.5cm flat dough.
3. Cut out cookies with your desired shape and place on a non stick baking sheet/parchment paper.
4. Use another smaller size cutter to cut the center for the glass portion.
5. For remaining dough, you may just knead and roll it flat again and cut out shape, repeat the same untill finished.
6. Bake the cookies at preheat oven 160’C for 8-10mins.
7. Remove the tray out from the oven. Place the FOX candy on the empty cookies space and place the tray back to oven to continue baking for another 5mins or till the cookies turn light golden brown and candy is melted too.
