13/1/2016 (Wed) 芝心蕃薯軟餅

These few days, I always wake up before alarm rings.. Am I getting old? As usual, thinking what shall I cook for my 29mo little one is a daily task. Sometimes I do consider try to avoid the food that my gal dislikes but sometimes I just keep cooking the food that she dislikes too... LOL... Seems like I have the spirit of  "No Fear to death"... (打不死的精神)

Breakfast: Baked Cheesy Sweet Potato and fresh milk
Lunch and Dinner: Aglio E Olio with roasted drumstick and Onion Soup
Teatime: Famous Amous Cookies (without chocolate chips) and honey lemon

芝心蕃薯軟餅

食譜:
蒸熟的紫色蕃薯泥90克
莫扎里拉奶酪10克
有機太白粉/玉米粉也可 10克(不加也可)
1)把太白粉加進蕃薯泥,攪拌均勻。
3)分成5份的薯團。
4)將一粒大約2克的莫扎里拉奶酪包在薯團內,搓圓後略微壓扁。
5)放在平底鍋煎至兩面金黃色即可。
备注:如用烤箱,170°度10-15分鐘。


Cheesy Sweet Potato Soft Cake 
Ingredients:
90g Cooked sweet potato
10g mozzarella cheese (cut into 2g each cube)
10g potato starch / corn starch

Steps:
1) mash the sweet potato and add in potato starch and mix well
3) divide dough into 5 portion
4) wrap in 1 cheese cube in each dough, roll and flatten a bit (use damp hand can easily handle this)
5) place the flatten dough on a heated non stick pan with some oil, pan fry till both side turn brown

p/s:  for oven baking:  170'C for 10-15mins.



蒜炒意大利面
材料:

意大利面(熟)2小碗
蒜米3-4瓣
芹菜 1支
新鮮菇類 適量
橄欖油1湯匙
乾香菜適量
大蒜粉適量
海鹽適量

做法:
1.意大利面放進沸水煮熟
2.煮意大利面的同時把蒜米和芹菜切片/切小顆備用
3.用小火熱鍋然後倒入一湯匙橄欖油然後炒爆香蒜蓉至金黃色
5.然後加入芹菜和菇略炒後加入海鹽
6.加入煮好的意大利面翻炒均勻後加適量的胡椒粉,大蒜粉和乾香菜提香
7.翻炒均勻就可上碟,配上烤雞腿(食譜如以下)享用啦~

烤雞腿
材料:
1只雞腿(用叉子在肉上戳孔)
幾滴天然醬油(我用液體氨基)
胡椒粉 適量
一些 蒜泥
幾滴 初榨椰子油

10-15克 莫扎里拉奶酪/車達起司

做法:
1)把蒜泥和雞腿一起放入一個碟子裡,倒入醬油,胡椒粉和椰子油,放入冰箱冷藏室醃約30分鐘或隔天再烤也可以
2 )烤箱預熱至190 ℃。
3 )然後把雞腿放在烤盤上。
4)烘烤15分鐘,然後取出,並把起司放在雞腿上面,繼續烤5分鐘。


Spaghetti Aglio e Olio
Ingredients:
2 baby portions cooked spaghetti
1 roasted chicken drumstick (recipe please refer below)
3-4 cloves garlic (sliced)
1 stick celery
some shimeiji mushroom
1 tbsp olive oil
some dried parsley
some garlic powder
sea salt a little bit

Steps:
1) sauteed garlic with the olive oil
2) add in shimeiji mushroom and celery to stir fry for a while
3) sprinkle some salt
4) add in cooked spaghetti to stir fry for a while
5) add in dried parsley and garlic powder
6) stir fry mix well and serve with roasted drumstick

Roasted Chicken Drumstick
Ingredients:
1 chicken drumstick (poke holes on the meat by using fork)
few drops liquid amino
dash of pepper powder
some crushed garlic
few drops VCO

10-15g mozzarella cheese/ cheddar cheese for topping

Steps:
1) Marinate the drumstick with all the ingredients for 30mins or more or overnight
2) Preheat oven to 190 degrees C.
3) Place chicken drumstick on a plate then place on the baking tray
4) Bake for 15 minutes then remove from oven and place the cheese on the drumstick, continue baking for another 5 mins.
