Good afternoon dear all mummies. .
I was a bit busy for the past few days as my mom was admitted to hospital due to dengue.
I went to visit her just during lunch hour and she can be discharged from hospital on Wednesday. Happy to know that.

Breakfast : Apple Rolled Oat, hard boiled egg and fresh milk
Lunch : Udon served with Chinese Yam chicken soup
Teatime : Fried arrowhead chips and honey lemon with apple slices




Apple Cinnamon Rolled Oat
Ingredients:
1/2 apple
1/4 cup fresh milk
20g rolled oat
dash of cinnamon powder


Steps:
1) blend apple, rolled oat and milk till smooth
2) pour in sauce pan 
3) cook under small fire till boiling 
4) ready to serve warm with dash of cinnamon powder

Udon with (淮山) Chinese Yam Chicken Soup

Ingredients :
Dried Japanese UDON noodle or any types of noodle, cook as per instructions on the packaging,  set aside. 

**My way of cooking to avoid mushy and soggy pasta and can last till dinner:~
1) I cook pasta as per instruction on packaging, 
2) drain away the hot water
3) soak pasta in a big bowl of ICE cold water for 30 seconds
4) drain away the cold water
5) add 1-2 tsp rice bran oil or olive oil to the pasta and mix well**


Chinese Yam Chicken Soup
Ingredients :
2 chicken tights (ayam kampung)
10" Yam (Huai San)
1 handful red dates (de-seeds)
2-3 litre water

Steps:
1) blanch the chicken tights in boiling water for 3-5 minutes
2) cut the chinese yam into small pieces and de-seed the red dates
3) Cook all ingredients in a big pot of water in high fire for 10 mins, then 2 hours in small fire.

Fried Arrowhead Chips
Ingredients:
Chinese Arrowhead
Oil for frying

Steps:
1) peel and slice the arrowhead into 1.5mm thickness
2) heat pan and add in adequate oil for frying
3) fried with medium low heat till light golden brown
4) place on kitchen towel paper to absorb excess oil



Honey Lemon Drink with apple slices
Ingredients:
1 slice lemon
2-3 tsp organic raw honey 
water
1/4 apple (cut into slices)
