12/1/2016 (Tue) 小鯷魚飯糰

Breakfast: Cauliflower Pizza
Lunch: Small anchovies rice balls, baby spinach salad and kunbu seaweed soup
Teatime: Apple souffle and Steam apple juice
早餐:菜花批薩 (無粉,無調味)
午餐:小鯷魚飯糰,凉拌菠菜和昆布紫菜湯
下午茶:蘋果蛋奶酥和蘋果湯



Cauliflower Pizza
Ingredients:
80-90g cooked cauliflower
1 egg
1 brown button mushroom
some red capsicum
15g cheddar cheese
dash of pepper powder

Steps:
1) steam/boil the cauliflower for 5 mins, put into blender and roughly blend it ( i use a manual crusher to grate it into small pieces)
2) add 1 egg into the crushed cauliflower and stir well
3) heat non stick pan with minimum fire, brush a little oil on the pan
4) pour the cauliflower mixture and use a spoon to adjust into round shape
5) place the chopped mushroom and capsicum on top
6) shred in the cheddar cheese and sprinkle some pepper powder
7) close lid and cook for 3-5 minutes or till it turns solid

花椰菜/菜花批薩
材料:
80-90g煮熟的花椰菜
1個雞蛋
1顆鮮蘑菇
一些紅甜椒
15克切達乾酪
胡椒粉適量

做法:
1 )蒸/水煮花椰菜5分鐘,放入攪拌機,攪碎即可(我用的是手動式刨碎機)
2 )加入1個雞蛋, 攪拌均勻
3 )以最小的火,加熱不沾鍋並刷少許油在鍋裡
4 )倒入花椰菜蛋液,並用湯匙大略整成圓形狀
5 )將切碎的香菇和甜椒撒在上面
6 )把切達乾酪刨碎撒上,最後也撒上一些胡椒粉
7 )蓋上鍋蓋,煮3-5分鐘或直到它成固體



Small anchovies Rice Balls
Ingredients:
1 bowl of cooked rice
2 tbsp small anchovy
1 tsp roasted sesame seeds
some sesame oil

Small anchovies seasonings: a few drops of natural soy sauce (I used liquid amino) , 1/8 tsp cane sugar

Steps:
1 ) Soak the small anchovy in water at least 30 minutes , change the water and then soak for 30 minutes more. Drain away water and set aside.
2 ) heat wok with a little oil, saute the anchovies till fragrant.
3) Add seasonings and sprinkle some water (so the anchovies not too hard and easier to chew. )
4 ) In a big bowl, add in rice and sauteed small anchovies, then add few drops sesame oil and sesame seeds, mix well and form 4 pieces of rice balls.

Cold dish:Spinach salad
Ingredients:
1/2 pack of baby spinach
1 tsp crushed garlic
3 drops liquid amino
some sesame seeds
1 tsp shallot oil (or can use sesame oil)

Steps:
1) boil baby spinach in boiling water for 1 mins, drain and soak in cold water for few seconds
2) drain away excess water
3) add in garlic, oil, sesame seeds and liquid amino, mix well.
4) ready to serve


Kunbu Miso soup
Ingredients:
1 pc 10cm x 15cm size Kunbu
1 pc 10cm x 10cm seaweed (nori sheet)
80g meat tenderloin
4 bowls water
dash of pepper powder
1-2 tsp miso

Steps:
1) soak kunbu in water for 20-30mins, cut into smaller pieces
2) cut meat into slices / mince it
3) Boil water in a pot, add in meat and kunbu. Cook for 20mins
4) add in seaweed and cook for another 5 mins
5) add in dash of pepper powder and spring onion (optional)
6) Add in Miso paste after Off fire.



小鯷魚飯糰
材料:
1 碗米飯
2湯匙 小鯷魚
1茶匙烤香的芝麻
香油少許

小鯷魚調味:幾滴天然醬油,1/8茶匙蔗糖

做法:
1)浸泡小鯷魚至少30分鐘,換水再浸泡30分鐘。瀝乾備用。
2)熱鍋,加入少許油,把小鯷魚炒香。
3) 加入調味料並撒一些水(以便小鯷魚不會太硬,寶寶比較容易咀嚼。)
4)在碗裡加入米​​飯和炒香的小鯷魚,然後加入香油和芝麻攪拌,捏出4個飯糰。

昆布紫菜湯
(適合12m以上的寶寶)
材料:
1片昆布 ( 10cm X 10cm )
1片紫菜( 10cm X 10cm )
適量胡椒粉
1-2茶匙味噌(一歲以下可免)
4碗水

做法:
1 )昆布浸泡後切成小片。
2 )加水入小鍋內,煮至沸騰後放入所有材料。
3 )煮30分鐘,灑些胡椒粉和海鹽,即可息火。

涼拌菠菜
材料:
1/2 包菠菜葉
烤香芝麻適量

佐料:
1 茶匙蒜蓉
3滴 天然醬油

1茶匙 香油

做法:
1) 菠菜葉洗乾淨,放入沸水中燙一分鐘,再用冷水浸泡一下,瀝乾水分備用。
2)將佐料放入碗中與菠菜拌好後,撒上芝麻即可。

Apple Souffle
Ingredients:
10g unsalted butter
1 tbsp flour
100ml fresh milk
2 eggs
15g cream cheese
1 tsp cane sugar
1/4 apple (steam for 10mins then slice it)

Steps:
1) heat pan, add in butter, add in flour and stir fry for a while.
2) pour in the milk and non stop stirring and cook till thick consistency
3) separate egg yolk and egg white
4) add in cream cheese into the roux (2) and mix well, then add in egg yolk and mix well.
5) sieve the batter through a coffee strainer to get smooth batter
6) beat egg white with cane sugar till hard peak form
7) pour the egg yolk batter  into egg whites and gently fold well
8) pour the mixture into 4 ramekin bowls and place the apple slices on top
9) bake at preheated oven of 180'C for 20-25mins
10) ready to serve hot


蘋果蛋奶酥(梳乎厘)
材料:
10克 無鹽奶油
1湯匙 麵粉
100毫升 鮮牛奶
雞蛋 2個
15克 奶油奶酪
1茶匙 蔗糖
1/4的蘋果(蒸10分鐘,然後切片)

做法:
1 )把鍋加熱,加入奶油然後加入麵粉煸炒一會。
2 )倒入牛奶,不停攪拌,煮至濃稠
3 )把蛋黃和蛋白分開,備用
4)奶油奶酪加入做法( 2 )裡拌勻,再加入蛋黃攪拌​​。
5 )把麵糊過篩成順滑的麵糊
6 )用攪拌器把蛋白與蔗糖打至硬性發泡
7 )把蛋黃麵糊倒入打發的蛋白裡,輕輕拌勻
8)將混合好的麵糊倒入4個烤碗,並把蘋果片放在麵糊上
9 )送入預熱好180'C的烤箱,烘烤大約20-25mins即可食用

Steamed Apple Juice
Ingredients:
1 Fuji Apple
1/2 cup drinking water

Step:
1) peel and cut the apple
2) steam for 10-15mins
3) blend the steamed apple with water
4) ready to serve 

p/s: the steaming process is to stop the apple from oxidation as the juice is not served immdiately
