25/9/2015 Friday 白雪小蛋糕

Good Morning and Happy Friday...
This morning I didn't feel wanna wake up as it was raining and so nice to lay on the bed without moving....hahahaha... Finally I got up at 5.30am and started to think what shall I cook for my nearly 26mo lo.

Breakfast: Snowy cupcake, steam sweet potato and milk

Lunch and dinner: White rice with Potato meat nugget and soup

Teatime: Cheesy bites (star shape) and honey lemon 




Snowy Cupcakes
Ingredients:
(A): 35ml fullcream milk/ fresh milk/ soy milk/ baby formula milk
        25ml olive oil/ corn oil/ any vege oil

(B): 40g cake flour/ plain flour/ all purpose flour
       
(C): 100g egg whites
        2 tbsp organic cane sugar/ castor sugar
        1/2 tsp lemon juice / vinegar

Steps:
1) Mix ingredient (A) until even then fold in ingredient (B).
2) preheat oven at 160'C.
3) Beat ingredient (C) until ribbon stage (soft peak). Add in mixture (1) and gently fold well.
4) spoon mixture into paper cups 3/4 full, arrange on a smaller baking tray.
5) Place the smaller baking tray on a bigger baking tray filled with hot water.
6) bake at 150'C for 15-20mins. (steam bath method)


雪白小蛋糕
材料:
( A): 35毫升 全脂牛奶/鮮牛奶/豆奶/嬰兒配方奶粉
                 25毫升 橄欖油/玉米油/任何有機蔬油

(B):  40克 低筋粉/普通麵粉/中筋麵粉
                 
(C):  100克 蛋白
                 2湯匙 有機蔗糖/白砂糖
                 1/2茶匙 檸檬汁/醋

做法:
1 )材料(A )混合後,加入(B )材料拌均勻。
2 )預熱烤箱160'C度。
3 )材料(C )打至濕性發泡後,再將打發的蛋白分兩次倒入( 1 )拌勻。
4)把麵糊(2)平均舀入紙杯内至8分满,排在一個較小的烤盤,轻敲一两下。
5 )將小烤盤放在一個裝半滿熱水的烤盤上。
6 )送進烤箱,以150'C度烤15-20mins 。 (蒸烘水浴法)
7 )出爐後移出烤盤放涼即可。



Potato Meat Nuggets
Ingredients:
80g meat tenderloin
1 small potato
2 asparagus
3 spring onion
1" carrot
dash of salt and pepper power
2 drops liquid amino

Steps:
1) cook or steam the potato till tender
2) mince the meat tenderloin
2) shred the carrot and dice the asparagus and spring onion into tiny size too
4) mash the potato and mix in all ingredients together 
5) use spoon to scoop 1 spoon of meat mixture and use hands to form nugget shape
6) pan fry or deep fry till golden brown


Star Shape Cheesy Bites
Ingredients:

1/2 Cup Plain Flour ( I used organic plain flour)
20gm Cold Butter, cubed
1 tsp organic cane sugar
20gm Grated Cheddar Cheese
1-2 tsp Cold Water


Steps:

1. Rub together the flour, sugar and butter until it resembles a breadcrumb texture.

2. Add the grated cheese and a tbs of water at a time kneading by hand to form a nice dough ball. It shouldn’t be sticky. If sticky add a little more flour.
3. Place on to floured surface and roll out until it is about 2-3mm thick. Cut with star shape cookie cutter or any shaped cookies cutter or just cut into squares, place onto a lined baking tray.

5. Bake at preheated oven of 180'C for 10-12 minutes or until lightly golden.
