throwback 19/01/2015

Good Morning dear all mummies~
Last week there was a mummy asking that if she would like to add butter into the tamago balls, how much to add... After referring to a recipe in the internet, i tried this morning and could not success but after some modifications, yes! Its done~
Breakfast: One Bite cheesy bread (baked yesterday) + steam peas n corn + watermelon juice

Lunch & Dinner: Fried tomato noodle & Orange juice (Dinner will serve with soup)
Teatime: pandan tamago balls & watermelon juice
Bite-size Parmesan Cheese Bread
Ingredients:
High Protein Flour 200g
Instant yeast 1/3tsp
Castor sugar 30g (I used muscovado sugar)
Egg 1pc
Salt 1/8 tsp
Parmesan Cheese powder 2Tbsp ( I used 15g Bega cheddar cheese)
Milk 80g
Unsalted butter 30g (cut into cube and cool down to room temperature)

Method:
1) Mix all the dry ingredients except butter till well-blended.
2) Add in the liquids (egg and milk) and knead to form a rough dough.
3) Add in butter cubes and knead to form elastic dough.
4) Let it proof for 60 minutes or till double its size.
5) Punch down the dough to release air and let it rest for another 15 minutes.
6) Flatten the dough and roll it into 1cm thick rectangular shape.
7) Using a sharp knife, cut the dough into 2cm x 2cm square pieces.
8) Arrange them into baking tray and let them proof for another 30 minutes.
9) Bake in preheated oven at 180′C for 12-14 minutes

P/S : I used bread maker function "dough" to beat 20mins for 1st time, then stop it, then restart again function "dough" for 1.5 hours, then follow the step 5 - 8, then apply egg wash (egg:milk 1:1) before baking.



Stir Fried Tomato Noodle 

Organic tomato noodle 1 pc
cook as per instruction on packaging or cook till the softness that your lo can chew.

Ingredients:
1 chunk of pork tenderloin (can use chicken or fish) cut into stripes
1 inch of carrot (cut into stripes or u can shred it too)
some green capsicum (cut into stripes)
few florets of cauliflower (or broccoli) cut into smaller size
1 shallot ( diced finely)
1 egg (i use 1 egg white only because left over from making tamago balls)
1 tsp amino liquid 
1 tbsp grape juice
dash of pepper

Steps:
1) fried scramble egg and set aside
2) sauteed the shallot till fragrance
3) add in the meat and cook till lightly golden brown
4) add in other ingredients and stir fry for a while
5) add some water to shimmer for 2-3 mins 
6) add in amino liquid and grape juice
7) add in the scramble egg and noodle then stir fry for a while, DONE.


Pandan Tamago Balls 
(with butter version)
Ingredients:
120g Potato Starch (original recipe was 100g, then it cant form a dough, so i add another 20g)
1 egg yolk
15-20g icing sugar (i used 15g only..mild sweet)
10g unsalted butter
10g milk powder
30g pandan juice ( i just blend few pandan leaves with water one night before)

Steps:
1) mix the butter and sugar, using hand whisk to beat till pale white then slowly add in egg yolk by 2 times.
2) add in milk powder and pandan juice mix well.
3) add in the potato starch, mix by spatula or spoon till dough is form...it suppose not sticky soft dough.
4) Pre-heat oven at 160'C.
5) divide the dough into 3 portions. Roll the dough become a stick, cut by knife at 1cm size each and roll into a small ball. 
6) place the balls onto a non stick baking sheet.
7) bake for 12-15mins. when half way baking, take out the tray and turn over the other side and continue baking.
