8/Oct/2015 Thursday ROSE PUFF PASTRY

Happy Thursday dear all...
Once again mummy was overslept this morning and woke up at 5am... Stir blurred and didn't know what to cook for lunch and teatime. Only one food that planned to make last night which is ROSE PUFF PASTRY. After scrolling my handphone's screen and finally made the followings:-

Breakfast: Rose Puff Pastry and fresh milk

Lunch and Dinner: Wantan with Yam (淮山) soup

Teatime: Apricot Teething Biscuit and watermelon pineapple juice

Rose Puff Pastry
Ingredients: to make 10 roses
5 pcs frozen puff pastry sheet, thawed 
2 red organic apples 
1/2 pc  lemon, juice
3 tablespoons of apricot jam

Steps:
1) Thaw the puff pastry at room temperature for 5-10 minutes.

2) Prepare a pot with 2 cups water and the lemon juice. Cut the apples in half, remove the core and slice the apples into thin slices of about 2mm thickness. Place the sliced apples in the pot with lemon and water, and cook under medium fire for 2mins. Drain dry and set aside.

3) Put the puff pastry on a a clean and lightly floured mat. Using a rolling pin stretch the dough a little, trying to keep it in a rectangular shape. Cut each slice of puff pastry into 4 , and combine 2 slices to become a long flat sheet.

4) Place 7-8 slices of apples on the center to upper part of the sheet. Fold up the bottom part of the sheet, then start rolling from one end until another end and place it in a muffin cup. 

5) Do the same for all 10 roses. Bake at 200 degrees C for about 30 minutes, then move the pan to the lowest rack in the oven, and bake for another 10-15 more minutes to avoid undercooking the puff pastry.

Beef Wantan
Ingredients:
180g Minced Beef (you can use chicken or pork too)
2" of yam 
2 pcs of fresh shitake mushroom (or dried mushroom)
2" of carrot
1 small pc of ginger
1 tsp sesame oil
1 tsp liquid amino
2 rice size of sea salt
dash of pepper powder

Wrapper: wantan skin (store bought)

Steps:
1) cut yam and mushroom into dices, shred the carrot and ginger.
2) combine all ingredients in a big bowl. Mix them well.
3) cut the wantan skin into smaller size if you desire to have mini wantan.
4) wrap in the meat mixture in each wantan skin.
5) cook in boiling water until they float in the water, cook for 1 more minute and remove the wantan from the boiling water and can be serve with a bowl of soup.

牛肉雲吞
材料:
180克牛肉(你可以用雞肉或豬肉
一小段山藥
2個 鮮香菇(或乾香菇)
一小段胡蘿蔔
1小塊姜
1小匙芝麻油
1茶匙淡醬油
一咪咪海鹽
胡椒粉少許

適量雲吞皮(商店購買)

做法:
1 )把山藥和香菇切丁,把胡蘿蔔刨絲和生薑刨碎。
2 )將所有材料放入一個大碗,拌勻。
3 )把雲吞皮成更小的尺寸。(如果要做小雲吞)
4 )舀一小坨肉團在每個雲吞皮,包好。
5 )在雲吞放進沸水中煮,直到浮在水中,再煮多1分鐘,然取出雲吞,加入湯裡,趁熱食用

Yam (Huai San) Soup
Ingredients:
60g pork tenderloin
60g yam (huai san)
2 fresh shitake mushroom
dash of pepper powder

Cook all the ingredients in 4 bowls of water in a small pot under small fire for 30mins. Off fire and done. 



Apricot Teething Biscuits
(adapted from Original recipe by 麻麻的艾寶樂園**橙香卡滋棒**)
Ingredients:
100g cake flour
40g Apricot jam
1/2 tsp +1/4 tsp Instant Dry Yeast
10g melted unsalted butter
40-50 ml Warm water 

Steps:
1. mix flour and yeast in a big bowl , add in the melted butter and slowly add in the jam mixture (jam + 40ml of warm water) and mix till dough is form. (do not over knead)

2. Cover dough with plastic wrap , let it rest for 15 mins.

3. Take roughly 10g of the dough and roll it into stick until all dough is used. Place the sticks on the non stick baking sheet which laid on a baking tray.

4. Preheat oven to 200 degrees, bake at 180 degrees for about 15 minutes and done.



**杏果酱寶寶磨牙餅乾**
改編自原食谱:麻麻的艾寶樂園**橙香卡滋棒**
這款餅乾較適合長牙後且咀嚼能力不錯的寶貝享用哦!

材料:
低筋麵粉100g
杏果酱40g
無鹽奶油10g
速發酵母粉 1/2茶匙+1/4茶匙
溫水40-50ml

做法:
1.麵粉+酵母→拌勻後,加入奶油,然后慢慢分次加入拌勻的果醬和40ml溫水,拌勻成團,(如果太乾才再慢慢加溫水),揉到表面大致光滑。(不可搓揉過度)

2.蓋上保鮮膜,靜置鬆弛15分鐘。

3.鬆弛好的麵團取適量小麵團,用雙手滾搓成細長​​條狀。 (可細一些比較脆,烤後會再膨脹)

4.烤箱先200度預熱10分鐘,再放入以180度烤約15分鐘即完成。
