21/4/2017(Fri) 千と千尋の神隠し . 无脸男. 便当

各位妈咪早!又到了星期五咯~


Breakfast: mini double cheese burger, hard boiled egg and fresh milk
Lunch Bento: NO FACE Bento and tomato soup
Teatime: fried lotus root

早餐: 兔子造型水煮蛋,迷你起司汉堡和杏仁燕麦
午餐: 无脸男便当和番茄汤
下午茶: 炸莲藕片

Homemade Mini Cheese Burger
Using Kneadless Bun recipe, please click HERE for recipe



5 mins knead-less bun
(Yield 16 buns)
Ingredients:
150g Milk
300g high protein flour
50g muscovado sugar or any sugar
1/8 tsp sea salt
20g milk powder
1 egg
1 tsp dry instant yeast
35g unsalted butter (room temperature) / olive oil

** some sesame seeds for topping

Steps:
1) mix all ingredients in a big bowl.
2) cover bowl with cling wrap, leave a small hole for air flow.
3) keep in the fridge 2 hours onwards, after 2 hours, you may take out and shape any time.
4) take out the wet dough and place on greased mat, I use some oil to grease my hands too.
5) divide dough into 16 equally small dough if intent to have round bun, brush a thin layer of water on the surface, then dip the surface onto sesame seeds
6) place the formed buns on the baking tray, put inside the oven (power off) and proof for 30mins. You may place a bowl of hot water inside the oven to help the proofing process better.
7) after 25mins, Remove the baking tray from the oven. Pre-heat the oven at 170'C for 5 mins.
8) Bake the buns for 16 mins or till light golden brown
9) brush some unsalted butter on the bread surface for better appearance. 

Meat Patties
Ingredients:
75g minced meat
1/2 tsp liquid amino
1 tbsp shredded/chopped carrot
dash of pepper powder
few drops of sesame oil
1/2 tsp honey

Mini Burger assembling ingredients:
meat patties, sesame bread, lettuce, cucumber, dash of tomato sauce, bega sliced cheddar cheese

Steps:
1) Mix all the meat patties ingredients and stir well with chopsticks in one direction till meat is sticky formed.
2) divide meat into 4 portions and use wet hands to hold and form the meat into ball shape and press to flaten.
3) pan fry with some oil till both sides light golden brown.
4) cut the sesame bread into half.
5) place the half base bread as 1st layer - lettuce - tomato sauce - cucumber - meat patty - cheese sliced - top with half bread 
Rabbit look hard boiled egg
兔子造型水煮蛋

Ingredients材料:
1 egg
some dried blue pea flower - for blue
seaweed for eyes and nose

(optional: beetroot powder /red dragon fruit juice - for red
pumpkin juice - for yellow/orange
pandan juice - for green
purple sweet potato - for purple)

Steps:
1) boiled blue pea flower in some water for 1-2 minutes.
2) cook egg as usual till hard boiled type. I put some salt in the water for easier egg shell removing.
3) remove the egg shell then place the egg in the blue pea water. cover the whole egg in the blue water, soak for 15mins or longer.
4) to make the rabbit, see picture below...happy trying

(千と千尋の神隠しSen To Chihiro No Kamikakushi)

今天做了小公主要求的无脸男便当。小公主今天想要吃面,可是很难弄成无脸男,于是另做了4个迷你可爱版的无脸男。看似很简单,却花了我整整一个小时才弄好。。是自己以为简单才答应小公主做的。。(懊恼)
- 无脸男饭团(寿司米和紫菜)
- 香煎三文鱼片
- 水煮豌豆,胡萝卜和小玉米
- 葱油拌有机甜菜根面
- 鹌鹑蛋


- Noh Face Rice balls (sushi rice and seaweed)
- blanched carrot, sweet pea and sweet corn
- Pan fry salmon fillet
- organic beetroot noodle with shallot oil
- hard boiled quail eggs

SPIRITED AWAY
"千と千尋の神隠しSen To Chihiro No Kamikakushi"
This Japanese animation us one of my favourites. We let our princess watches the same and she likes the "No-face" very much. Once I bought her the figurines of the No face. Initially I thought it is very easy to make. But once I started in assembling the sushi, the tiny eyes and expression seaweed cutting that gonna killed me. Omg.... I spent one hour just for that 4 mini No Face sushi.@@


Dried Noodle
Ingredients:
1 serving of cooked noodle
1/16 tsp Dark Soy Sauce (a little bit will do)
1 tbsp shallot oil
1 tsp fried shallot
dash of pepper powder

Steps:
1) Peel and cut a few piece of shallots, slice them. Deep fry them in hot oil with low fire until light brown then remove from heat. Make extra shallot oil can be kept for other usage and future use within 2-3 weeks.
2) Add 1 tbsp the shallot oil, 1 tsp fried shallot and a pinch of dark soy sauce in a bowl.
3) Cook noodle in boiling water till cooked Add the hot noodle into the shallot oil mixture and mix well. Serve with other side dishes and enjoy!

干捞面
材料:
1份煮熟的面条
1/16茶匙黑酱油(一点点都行)
1汤匙 葱油
1茶匙 炸葱头
胡椒粉 适量

做法:
1)首先把几粒小葱头去皮,切片。加入低火热油里慢慢炸至浅棕色马上离火。
2 )把1汤匙的葱油, 1小匙的炸葱头和黑酱油放入碗里​​。
3)把面条煮熟后放入葱油里拌匀即可和其它配菜一同享用!



连藕洗净去皮刨片,入油锅炸至浅金黄色。
clean lotus root, de-skin, slice into thin layers, deep fry till light golden brown.
