6/4/2017(thur) 平底鍋蛋糕/煎餅Pancake (pan cook)

Last night before bed time, my gal was asking me, "mommy, what is my breakfast tomorrow?" I told her "pancake". Then she said, "can I have barley?", so I told her,."okay, teatime you will eat barley ya!"
Breakfast: pancake (pan cook cake) without any rising agents
Lunch: Animal Rice balls with homemade sausage and vegetables
Teatime: barley dessert and yesterday's sweet potato sticks

早餐:煎餅(平底鍋蛋糕)無添加發粉之類的東西
午餐:動物飯糰,自製香腸和蔬菜
下午茶:薏仁甜湯和昨天的無糖酥脆薯條

平底鍋蛋糕/煎
材料:
【蛋黃麵糊】
低筋麵粉40g
蛋黃1顆
鮮奶40g
植物油/橄欖油10g
蜂蜜1茶匙

【蛋白霜】
蛋白1顆
有機蔗糖5g

做法:
1)把蛋黃麵糊的材料全部加在一起拌勻備用。
2)蛋白加入糖打到濕性發泡(拉出的蛋白好像鳥嘴般的)。
3)把蛋白霜分2-3次加入蛋黃麵糊,以切入方式輕輕攪拌均勻。
4)平底鍋鋪上不沾烤布/紙並倒入拌好的麵糊,稍微抹平表面。(如果使用不沾鍋,不需要鋪不沾烤布/紙)
5)把鍋蓋蓋上,用最最小的火烘烤大約5分鐘,然後打開鍋蓋,翻面,把鍋蓋蓋上,繼續烤2分鐘。
6)使用牙籤 插入蛋糕中央,拔出時牙籤不會沾附濕黏的麵粉亦表示已熟透。

備註:打開時小心鍋蓋蒸汽的水不要滴到蛋糕。



Pancake (pan cook)
Ingredients:
[ Yolk batter ]
40g cake flour/ Low protein flour
1 egg yolk
40g fresh milk
10g vegetable oil / Olive oil
1 tsp honey

[ Meringue ]
1 egg white
5g Organic Cane Sugar

Steps:
1) In a mixing bowl, add in egg yolk, oil and strawberry puree, mix well then add in flour and mix till combined. Set aside.
2) Place the egg whites into a clean bowl and whisk till bubbly then add in sugar by 2 portions. Continue whisking until soft peaks form, approximately 2 minutes.
3) Transfer 1/3 of the egg whites to the egg yolk batter and mix well. Add the remaining egg whites and fold in gently. 
4) Lay a non stick baking sheet / paper in a non stick pan, then pour in the batter. (if using very good non-stick pan, can skip the baking sheet)
5) Cover the pan with lid, bake under smallest fire for about 5 minutes, open lid and over turn the pancake, close lid and continue baking for 2 mins.
6) test by inserting a wooden stick and pull out clean, then ca off fire and remove pancake to wire rack.

P/S : Be careful when you open the lid to avoid water dripping onto the cake.


番茄醬
成分A:
16個 櫻桃小番茄
1/2粒 洋蔥
1/2粒 有機蘋果
1/4杯水

成分B:
一些橄欖油
1/2粒洋蔥(切碎)
1/2杯水
胡椒粉粉和海鹽 適量
乾香菜適量

做法:
1)用料理棒把成分A的材料打成幼滑,過篩待用。
2)橄欖油加入熱鍋,把洋蔥加入,炒至金黃色,然後倒入(1)。
3)倒入1/2杯水,燜煮2-3分鐘。
4)加入海鹽,胡椒粉和乾香菜
5)熄火,完成。

Tomato sauce
Ingredients A: 
16 pcs cherry tomatoes
1/2 onion
1/2 organic apple
1/4 cup water

Ingredients B:
some olive oil
1/2 onion (chopped finely)
1/2 cup water
dash of pepper and salt to taste
some parsley and italian herbs

Steps:
1) Blend the ingredients A till smooth, sieve and set aside
2) Heat pan with olive oil, saute onion till golden brown then pour in the blended ingredients A
3) pour in 1/2 cup water, boil then simmer for 2-3 mins.
4) add in salt, pepper, parsley
5) off fire and done.
