Happy Friday 

Breakfast: pan fry mantou with egg, baked eggplant, rock melon and fresh milk

Lunch and dinner: One pot chicken rice and watermelon pomegranate juice

Teatime: Sweet corn sticks and rock melon


Pan fry Mantou
Ingredient:
1 pc mantou
1 egg

Steps:
1) slice the mantou into 5-8mm thickness
2) lightly beat the egg, dip the mantou slices completely with egg
3) pan fry in a non stick pan without oil

Baked Eggplant
Ingredients:
1 small eggplant
some cheddar cheese ( i used bega extra tasty)
some dried parsley

Steps:
1) slice the eggplant into 5-8mm thickness
2) bake at preheated oven of 200'C for 5 mins
3) remove from oven, shred the cheese on top of each eggplant slice
4) continue baking for another 10mins or cheese melted and turn lightly brown




One Pot Chicken Rice 
Ingredients:
4 tbsp Mix Grains rice
1/2pc chicken breast (cut into tiny cubes)
some oyster mushroom
2 shallots
1 clove garlic
4-5 slices ginger
1/2 tsp liquid amino or pinch of salt
dash of pepper powder
some green onion 


Steps:
1) soak mix grains rice overnight
2) chop shallots and garlic finely
3) cut ginger into slices and cut the mushroom into small pieces
4) heat pan with low fire, add in some oil, sauteed shallot and ginger till fragrance
5) add in chicken and mushroom stir fry till light golden brown
6) throw away the soaked water, pour the rice into the pan
7) stir fry for 2 mins
8) transfer the rice and chicken into rice cooker, pour adequate water to cover rice
9) cook rice as usual in rice cooker or steam for 15-20mins.





Sweet corn sticks
Ingredients
80g cooked sweet potato
40g sweet corn
40g cooked rice
10g milk powder
10g unsalted butter
1 egg yolk
2 tbsp corn flour

Steps:
1) blend all ingredients till smooth
2) put into a plastic bag
3) cut a hole at the edge
4) squeeze out stick shape or any shape you prefer on non stick baking sheet
5) bake at preheat oven of 180'C for 15-20mins or till golden brown at the edges


甜玉米棒/玉米番薯酥餅
材料:
80克 煮熟的番薯
40克 甜玉米粒
40克 熟米飯
10克 全脂奶粉
10克 無鹽奶油
1粒 蛋黃
1湯匙 玉米粉

做法:
1 )把所有材料用攪拌機打至幼滑
2 )放入塑料袋
3)在塑料袋的角剪一個小洞
4 )擠壓出你喜歡的形狀在不粘烤紙/布上
5 )送已經預熱180'C度的烤箱,烤大約15-20mins或至金黃色
