Yesterday was the monthly measurement day for my 26mo lo. We measure by ourselves since she was full moon. Last month, she was 90cm height and 12.6kg, last night we measured her height and weight and she is 91cm height and 13.3kg weight (Nett weight). Seeing her grows daily and looking at the readings of her growth chart, we are happy that she is eating well so far even though sometimes she did reject some foods that she doesn't like.
Breakfast: Panfry Egg with Spaghetti and Goji berry, fresh milk
Lunch and Dinner: Stir Fried Udon with chicken and mix vegetables
Teatime: Soft Pancake (stuffing cake) and manuka honey lemon
Panfry Spaghetti with Goji berry
Ingredients:
1/2 cup cooked spaghetti
1 tbsp goji berries
1/2 pc Japanese cucumber
1 tbsp sesame oil
1 egg (lightly beaten)
dash of salt (or few drops liquid Amino) and pepper powder
Steps:
1) mix egg with spaghetti, goji berries and seasonings in a bowl
2) heat pan with small fire, add in sesame oil
2) pour in the spaghetti egg mixture and form nicely round shape by using a spoon
3) lay the cucumber slices on the spaghetti egg mixture before the egg is turned solid
4) flip over the pan noodle once the egg turns solid, panfry another side till egg is fully cooked
Stir Fried Udon with chicken and mix vegetables
Ingredients :
1/2 pack fresh udon, wash and soak in filtered water prior cooking
1/2 onion
40g chicken breast (cut into slices, marinated with liquid amino, sesame oil and pepper powder)
1/3 pack shimeji mushroom
1/2 japanese cucumber
some carrot
some broccoli
some celery
some grapeseed oil
1/3 cup water / soup stock
1 tsp liquid amino
Some sea salt and black pepper powder to taste
Steps:
1) Heat pan and add in olive oil
2) Sautéed onion till fragrant, add in chicken and stir fry for a while
3) Add in other vegetables and stir fry for 1 min, add in water and close lid, simmer for 3 mins
4) Add in sea salt, liquid amino and udon, stir well.
5) add in dash of black pepper powder and stir fry for another 1 min and done
left side is for lo (with little bit liquid amino only) ,
right side is for family members (with seasonings)
备注:食譜灵感来自白雪小蛋糕,只是减少了蛋白,加了蛋黄。整体的蛋量是100克。油量昨天打错字了,不是35克,而是25克。結果被誉为不合格給寶寶吃,抱歉了。。。。是我的錯,為了快些打完食譜而忽略了。
夾心小蛋糕
材料:
( A): 35毫升 全脂牛奶/鮮奶/豆奶/嬰兒配方奶
25毫升橄欖油/玉米油/任何菜油
1顆 蛋黃(20克)
(B) : 40g 低筋粉/蛋糕粉/普通麵粉/中筋麵粉
(C ) : 2顆 蛋白(80克)
15克 有機蔗糖/白砂糖
1/2茶匙 檸檬汁/醋
夾心料:
商店買的無糖杏果醬
或者任何果醬或自製花生醬
做法:
1 )材料(A )混合後,加入(B )材料拌均勻。
2 )預熱烤箱160'C度。
3 )材料(C )打至濕性發泡後,再將打發的蛋白分兩次倒入( 1 )拌勻。
4)把麵糊舀入擠花袋,底部剪个小洞,擠麵糊到不粘黏烤纸/布上,輕輕地挤成圓形。 (我的烤盤可以挤11-12个 ,视蛋糕的大小)
5)把烤盘送进烤箱,烤20分鐘或表皮呈淺棕色。
6)把蛋糕移去钢丝铁架上待冷卻。
7)在蛋糕底部涂抹一层薄薄的果酱然後夹上另一片蛋糕黏在一起。
Soft "PANCAKE"
Ingredients:
(A): 35ml fullcream milk/ fresh milk/ soy milk/ baby formula milk
25ml olive oil/ corn oil/ any vege oil
1 egg yolk
(B): 40g cake flour/ plain flour/ all purpose flour
(C): 2 egg whites
15g organic cane sugar/ castor sugar
1/2 tsp lemon juice / vinegar
Filling
Store bought sugarless Apricot Jam
or any Jam or Homemade peanut butter
Steps:
1) Mix ingredient (A) until even then fold in ingredient (B).
2) preheat oven at 160'C.
3) Beat ingredient (C) until ribbon stage (soft peak). Add in mixture (1) and gently fold well.
4) Scoop the batter into a piping bag. Cut a hole at the end and squeeze the batter onto the parchment paper and gently form round shape. (My baking tray can put 11-12pcs, depends on size)
5) Bake for 20mins or light golden brown on the surface.
6) Place the pancake on the wire rack for cooling down.
7) Spread a thin layer of Jam on the bottom surface then place another pancake and attach together.
