15/7/2016 (Fri) 奶酪蝦味鮮

Breakfast: Cheese stick and fresh milk
Lunch and dinner: mee sua, chicken fillets and chinese yam soup
Teatime: chrysanthemum goji berries tea and prawn crackers

早餐:奶酪條和鮮奶
午餐和晚餐:面線,雞柳肉塊和淮山雞湯
下午茶:菊花枸杞茶和奶酪蝦味鮮

雞柳肉塊
材料:
2條 雞柳
1/2茶匙低鹽醬油/天然醬油
1/4茶匙 有機蔗糖
胡椒粉適量

做法:
1 )把雞柳和調味材料,混合一下,放置冰箱醃至少30分鐘。
2 )加少許油在熱鍋裡,把雞柳煎至兩面金黃色即可。

Chicken Fillets
Ingredients :
2pcs chicken fillets 
1/2 tsp liquid amino
1/4 tsp oragnic cane sugar
Dash of pepper powder 

Steps: 
1 ) marinate chicken with seasoning and place the refrigerator for at least 30 minutes.
2 ) add a little oil in the wok, pan fry the fillets golden brown on both sides.

Chinese Yam Chicken Soup
Ingredients :
2 chicken tights (ayam kampung)
10" ChineseYam (Huai San)
some cordycep flower
1 handful red dates (de-seeds)
some goji berries
dash of pepper powder
2-3 litre water

Steps:
1) blanch the chicken tights in boiling water for 3-5 minutes
2) cut the chinese yam into small pieces and de-seed the red dates
3) Cook all ingredients in a big pot of water in high fire for 10 mins, then 2 hours in small fire. Add in dash of pepper powder and off fire.

淮山
材料:
2個 雞腿
25公分 新鮮淮山
紅棗 適量
枸杞 適量
蟲草花 適量
胡椒粉 適量
4杯水

做法:
1 )先把雞腿放進熱水煮2-3分鐘去血水。
2 )把淮山去皮切,把紅棗去籽。
3)把所有材料和水放入大鍋裡,大火煮10分鐘後轉小火煮1-2小時,灑些胡椒粉即可息火。

奶酪蝦味鮮
材料:
蝦仁60克
太白粉/馬鈴薯粉 40克
蛋黃 1個
水 2湯匙
10克 切達奶酪 (如何選奶酪給寶寶
白胡椒粉適量
糖1/2 茶匙

做法:
1. 把所有材料放入果汁機或攪拌器,打成黏稠的泥狀。
2. 然後把蝦泥裝入塑膠袋,綁好後塑膠袋角處剪一個小洞(4-5毫米)。
3. 預熱烤箱180度。
4. 把不粘烤布/紙鋪在烤盤上,然後擠出條狀。(我的烤箱是33公升的容量,剛好擠到一盤。)
5. 送進已經預熱的烤箱,烤約10分鐘後,轉換盤的方向,下調溫度160烤10分鐘或至表面有一些上色了,即可關掉電源。繼續悶5-10分鐘後取出。完成啦~

Cheesy Prawn Rings
Ingredients: 
60g Prawn
40g potato starch
1 egg yolk
2 tablespoons water
10g cheddar cheese
dash of pepper
1/2 tsp cane sugar

Steps:
1) put all ingredients in the blender, blend till smooth. 
2) pour the mixture into a plastic bag then cut a small hole (4-5mm) at the edge of the plastic bag. 
3) preheat oven at 180'C.
4) squeeze out stripes on the non-stick baking sheet laid on the baking tray. 
5) bake at preheated oven of 180'c for 10 mins, turn baking tray in side out, reduce temperature to 160'C, continue baking for 10 mins or till lightly golden brown. Off oven. let the tray stay inside the oven for another 5-10mins. DONE~
