Fried shallot oil 炸葱油
Dried Noodle
Ingredients:
1 serving of cooked noodle
1/16 tsp Dark Soy Sauce (a little bit will do)
1 tbsp shallot oil
1 tsp fried shallot
dash of pepper powder
Steps:
1) Peel and cut a few piece of shallots, slice them. Deep fry them in hot oil with low fire until light brown then remove from heat. Make extra shallot oil can be kept for other usage and future use within 2-3 weeks.
2) Add 1 tbsp the shallot oil, 1 tsp fried shallot and a pinch of dark soy sauce in a bowl.
3) Cook noodle in boiling water till cooked Add the hot noodle into the shallot oil mixture and mix well. Serve with other side dishes and enjoy!
干捞面
材料:
1份煮熟的面条
1/16茶匙黑酱油(一点点都行)
1汤匙 葱油
1茶匙 炸葱头
胡椒粉 适量
做法:
1)首先把几粒小葱头去皮,切片。加入低火热油里慢慢炸至浅棕色马上离火。
2 )把1汤匙的葱油, 1小匙的炸葱头和黑酱油放入碗里。
3)把面条煮熟后放入葱油里拌匀即可和其它配菜一同享用!
Honeydew Melon Sago Dessert
(serves 5-6)
Ingredients
1 medium melon or honeydew, appro 1.2 kg
60g small sago pearls
180g coconut milk
400g water
50g rock sugar (adjust to own preference)
Water for boiling sago
Steps:
1) Soak sago for 30mins.
2) Rinse and wash the sago then put in a pot. Add in fresh water and cover all sago with water level 2 inches above the sago. Cover with lid and bring to a boil, then low the fire and let the sago continue to move around within the boiling water with ease. Also, keep stirring to avoid the sago from sticking to the pot.
3) Cook the sago until there is still a bit of opaque white left in the centre of the pearls. Turn off the heat now and use the residual heat to continue cooking the pearls until they are just transparent.
4) Strain the cooked sago pearls to remove the excess cooking water and set aside in a small bowl and cool to room temperature.
5) while cooking the sago, cut the melon. Take half of the flesh of the melon and blend it into puree juice. The other half can either be chopped into bitesize cubes, or shaped with a fruit baller.
6) Boil sugar and water in a pot until the sugar is completely dissolved. Add in coconut milk and cook till just boiling and turn off the fire.
7) Add in sago, melon puree juice and melon cubes, mix well and chill in the fridge.
蜜瓜西米露
材料:
60克西米、1粒哈蜜瓜(大约1.2kg)、50克冰糖、180克椰奶、400克清水、煮西米的水
做法:
1、西米入开水锅中煮熟,冲凉待用。
2、糖加入水和椰奶,煮成椰糖水冷却。
3、哈蜜瓜洗净去皮,一半的果肉取出切成小块,搅成果汁。另外一半切成小颗粒。
4、将果汁、椰糖水、西米混合入冰箱冷冻一下即可。

Onion Soup
Ingredients
100g lean pork
1 big onion
1/4 pc carrot
dash of pepper
4-5 cups water
Steps:
1) Pour water into a medium size pot, cook under medium heat
2) add the meat, onion and carrot into the boiling water
3) cook for at least 30 mins or longer till remaining 2 bowls of soup
4) add in dash of pepper and ready to serve warm
洋葱汤
材料:
100克瘦肉
1粒 大洋葱
1/4 胡萝卜
胡椒粉适量
4-5杯 清水
做法:
1 )把水倒入一个中等大小的锅,用中火加热
2 )把肉,胡萝卜和洋葱加入沸水中
3 )煮至少30分钟或更长的时间,直到剩下2碗汤的分量
4 )加入适量胡椒粉即可。
