Steamed Snowskin Mooncakes 30/9/2017

STEAMED snowskin
Ingredients:
25g glutinous rice flour
20g rice flour
10g wheat starch
20g icing sugar
90 ml milk
10g vegetable oil (such as sunflower oil or canola oil)

3 Tbsp cooked glutinous rice flour, for coating
(I didn't use at all)

Steps:
1) Sieve all flours in a large mixing bowl. Add sugar and combine well. 
2) Pour milk into the flour mixture. Stir in vegetable oil. 
3) Drain through a fine sieve into a large and shallow pan. Cover with foil and steam for 20 minutes over medium high heat. 
4) Use a pair of chopsticks to stir the hot dough until shinning smooth.
5) pour the smooth dough on a cling wrap, crap it and store in the fridge at least 1 hour before wrap in the filling.

I used purple sweet potato powder and strawberry powder for the coloured pattern. Just knead in the powder evenly with some snowskin dough.

SUGARLESS RED DATE PASTE
450g Red dates
45g vegetable oil

Method:
1) Remove the seeds of the red dates
2) wash the red dates
3) put red dates in a big pot and pour in water to cover the red dates
4) cook with high heat till boiling then turn to small fire and cook for 30-40mins
5) Sieve the red dates and using a big spoon to press the red dates through the sieve (separating the skin away)
6) pour the mashed red dates into a non-stick pan and cook with medium fire by stirring non stop until the moisture in the red dates getting lesser
7) pour in the oil by 2 additions and each time pouring must wait till completely absorption only to pour again.
8) Finally stir cook the paste till water evaporated completely and turns shinning and dough is formed. off fire and let it cool down completely then keep in the refrigerator.
9) weight out the required filling and roll into balls. keeping fridge until needed.



Notes:
Cooked glutinous rice flour is available at most bakery ingredient shops. You can make it yourself though. Simply cook the flour in a frypan without any oil over medium-low heat, stirring occasionally. When smoke releases and the flour turns light yellow, it’s cooked. Remove from the heat and let it cool down completely. Then you can use it to coat your mooncakes.

For steaming the snowskin and filling, if you can’t taste any raw flour, it’s done.

The snowskin mooncakes can be stored in freezer up to a few weeks. Before serving, just transfer the mooncakes to fridge for about 3 hours, until they become soften a bit.


无糖枣泥馅
200g 红枣
20g 植物油

做法:
1)取出红枣的种子
2)洗干净红枣
3)将红枣放入大锅中,倒入水并覆盖红枣
4)用高温煮沸,然后转小火,煮30-40分钟
5)用大勺子将红枣压成泥并过筛(把皮去掉)
6)将枣泥倒入不粘锅中,用中火不断搅拌翻炒直到红枣中的水分变少
7)分2次加入植物油,小火慢慢炒匀,每次都要等油分完全吸收进去再加
8)最后炒到枣泥中的水分完全蒸发,枣泥变得油亮成团即可,这个过程有点漫长,手会很酸,要有点耐心哦~ 熄火,让它完全冷却,然后放在冰箱里。

蒸的冰皮
材料 (做成160 克饼皮) :
90 毫升 牛奶
10 克 食用油
25 克 糯米粉
20 克 粘米粉
10 克 澄面粉(小麦淀粉)
20 克 糖粉
月饼模63克

冰皮做法:
1) 把所有制作冰皮的材料混合后拌匀。
2) 把蒸碗抹上一层薄薄的油,然后把粉浆过筛入蒸碗里。
3) 以中火蒸20分钟。
4) 趁热用筷子搅拌至顺滑,可以搓一搓至到面团光滑,要带不粘手套,因为面团非常粘手。
5 )稍微冷却后,用保鲜膜把冰皮包起来,放入冰箱冷藏静置20分钟,直到完全冷却。

冰皮和枣泥馅合体做法:

1) 准备手粉(防粘和脱模用): 把少许糯米粉以700W微波1分钟后搅拌,重复步骤1-2次,直到尝起来没有生粉的味道即可(也可用锅炒熟)。
2 )把冰皮和枣泥馅分成:冰皮每份约30 克,枣泥馅每份30 克。
3 )将冰皮面团用手压扁后,放入紫薯内陷,用手指挤压收口。
4) 把面团搓圆,沾上一层薄薄的手粉,拍掉多余的粉,放入模具中压花造型。
5 )放入冰箱冷藏1小时后,口感更佳。
