Last few day we measured our little princess as usual... she is now 107cm tall and 17.8kg in weight at the age of 4 years 2 months old. We measure her monthly since she was born. We are happy to see her grows well and happy everyday. Recently we only sent her to music class and art class weekly. Hopefully she enjoys the 2 classes that she is attending.
Breakfast today is just Goji Berries Cookies and fresh milk.
Lunch Bento is chicken curry, plain rice and okra.
Teatime shall be dried Apple snacks or fresh organic Apple... up to princess's choice. LOL
枸杞餅乾
材料:
有機枸杞2湯匙(15克)
溫水2湯匙
特幼麵粉100克
無鋁蘇打粉1/4茶匙
無鹽奶油35克
有機蔗糖20克
做法:
1)枸杞+溫水泡軟,連同水一起打成汁。
2 )奶油軟化後,加入糖打至松發。
3 )加入枸杞汁,攪拌均勻。
4 )篩入麵粉和蘇打粉,輕快搓勻成團(不可過度搓揉) 。
5 )把麵團收入冰箱冷藏30分鐘鬆弛。
6 )取出麵團,用擀面棍擀成0.4CM厚的麵餅,用饼干模切出形狀。
7 )送進已經預熱的烤箱170度烤15-20分鐘或直到表面金黃色即可出爐。

Goji Berries / Wolfberry Cookies
Ingredients:
2 tablespoons ( 15 grams ) Organic Wolfberry
2 tablespoons warm water
100g superfine flour /cake flour/low protein flour
1/4 tsp Aluminum-free baking soda
35g unsalted butter
20g organic cane sugar
Steps:
1 ) Wolfberry + warm water soak till soft, blend till smooth.
2 ) beat butter and sugar until fluffy .
3 ) add in wolfberry juice, mix well.
4 ) Sift in flour and baking soda, knead briefly till dough is formed ( do not over knead ) .
5 ) keep dough in the refrigerator for 30 minutes to rest.
6 ) take out dough from refrigerator, roll dough into 0.4cm flat dough. use cookie cutter to ct out desired shapes.
7) bake at preheated of 170 ° C for 15-20 minutes or until the surface is golden brown

Mix Vegetables Chicken Curry
Ingredients:
1 pc small potato
1/4 pc of carrot
2 cloves garlic (chop finely)
2 pcs chicken fillet
2-3 tbsp pure grape juice OR 1/2 tsp can sugar
pinch of sea salt
2 tsp organic curry powder
1/2 cup full cream milk
Adequate water ( i used 2 cups water)
Steps:
1) cut all ingredients into small bite size that lo can chew
2) sautee garlic with rice bran oil (or any good vege oil) till fragrant
3) add in chicken, carrot and potato to stir fry 1-2 mins
4) add in curry powder to stir fry till fragrant too
5) then pour in water to cover all ingredients and shimmer till potato is tender
6) add in milk, grape juice and salt.
7) cook till desired consistency then off fire.
蔬菜雞肉咖哩
材料:
1個 小的馬鈴薯/土豆
1/4胡蘿蔔
2片 蒜米(剁碎)
2片 雞柳 (切丁)
2-3湯匙純葡萄汁或 1/2茶匙有機蔗糖
少許海鹽
2茶匙 有機咖哩粉
1/2杯 牛奶
清水適量(我用2杯水)
做法:
1)將所有材料切成小顆粒。
2)用米糠油(或任何好的菜油)把蒜米炒香。
3)加入雞肉,胡蘿蔔和馬鈴薯炒1-2分鐘。
4)加入咖哩粉拌炒至香。
5)然後倒入水將所有材料覆蓋,燜煮至馬鈴薯變軟。
6)加入牛奶,葡萄汁(或有機蔗糖)和鹽。
7)烹調至濃稠,然後熄火。
蘋果乾片
DRIED APPLE SLICE
Homemade Dried Apple Snack
Ingredient:
2 organic apples
1/4 tsp salt
2-3 bowls drinking water
Tools required: Food Dehydrator and oven
optional way to keep apples from browning:
1 cup water + 2 tbsp honey, soak apple slices for a few minutes.
Steps:
1) add salt in the water, stir well
2) wash, peel skin (not to peel if using organic apple, remove core, slice into 2mm thickness
3) soak the cut apple in the salt water for few seconds
4) drain away the salt water and pat dry the apple with kitchen towel (can skip this if no kitchen towel)
5) lay all the apple slices on the rack, do not over lay them
6) set temperature 70'C, on the fan for 8 - 12 hours (depending on the moisture in the fruit)
7) after the apple slices are dried, the texture of the dried apple is chewy
8) bake at preheated oven of 100'C for 15-20'C, the texture of the dried apple is crunchy now.
If using oven only, 120'C for 2 hours.
自製蘋果乾小吃
材料:
2粒 有機蘋果
1/4茶匙 鹽
2-3碗 煮过的水
所需工具:食品脫水机和烤箱
做法:
1)把盐和水混合。
2)苹果洗净切成大约2mm的厚片。
3)把苹果片浸泡在鹽水幾秒鐘。
4)滴干鹽水,用廚房紙巾吸掉水分(如果沒有廚房紙巾可以跳過)。
5 )均匀的把苹果摆在脱水機架上,不要重叠。
6)設定溫度70'C ,在風扇8 - 12小時(視水果的水分)
7)蘋果片乾燥後,还不是很脆的。
8)預熱烤箱100C度烘烤15-20分钟。
如果没有食品脱水机,可以直接使用烤箱。
做法:
1)把盐和水混合。
2)苹果洗净切成大约2mm的厚片。
3)把苹果片浸泡在鹽水幾秒鐘。
4)滴干鹽水,用廚房紙巾吸掉水分(如果沒有廚房紙巾可以跳過)。
5)把苹果均匀的摆在烤架上。
6)放入烤箱中层。
7)启动对流风扇,120度,大约2个小时。
**苹果片烤制前用柠檬水泡一下或用淡盐水煮一下可以有效防止氧化变色
**烤好的苹果干要密封保存,尽快吃完,以防受潮后发霉变质。
