19/7/2017 snoopy bento with minced meat tofu

今天的妈咪有睡迟了~ 昨晚收拾厨房里的一些便当用具到很夜,所以今天的精神有点不足。但是宝宝的食物也不能忽略。。于是快手快脚地做了个简单的香蕉杯子蛋糕,史努比肉碎豆腐便当和鲜橙奶昔给小公主。

Very embarrassing to say that, mommy was lazy to wake up again this morning ended I started to cook at 5.50am. Fast hand fast leg to cook rice, put my gal's clothes to laundry, take out minced meat from freezer, mashed the banana, made banana cake, cook the minced meat tofu, blend the Orange milkshake, take out the banana cupcakes from oven, continue the remaining cookie dough from yesterday, shaped and baked, assemble the Bento, boiled the quail eggs. DONE.

Today i used 1/2 of the recipe and yield 3 pcs cupcakes
baked at 175'C for 15 mins only
(100g batter each)

Banana Cake
Ingredients
½ Tbsp. butter for greasing the baking dish (i didn't)
1 ⅔ cups (208g) all-purpose flour
½ tsp. salt (i put 1/4tsp)
½ tsp. baking soda
½ tsp. baking powder
½ cup (113 g) butter, soften
50g cane sugar
2 large eggs, at room temperature
1 Tbsp. cooking oil (vegetable, canola, grapeseed oil)
1 tsp. vanilla extract
3-4 ripe bananas (about 200g)
½ - ⅔ cup raisins (optional)
1 additional banana for topping

Steps:
1) Preheat oven to 175°C and grease an 8” square baking dish with butter (bottom and sides).
2) In a bowl, combine flour, salt, baking soda and baking powder and whisk all together.
3) In another bowl, combine soften butter and sugar and whisk well.
4) Add eggs, oil, and vanilla extract and beat with the whisk until well blended.
5) Mash bananas with a fork and mix into the egg mixture.
6) Add the flour to the banana mixture and stir just until blended. Add raisins, if you prefer.
7) Pour the batter into the prepared pan, spreading it evenly with the rubber spatula. Slice 1 banana thinly into rounds and decorate on top of the banana bread.
8) Put the pan in the oven and bake at 175°C until a toothpick inserted into the center of the bread comes out clean, about 1 hour.
9) Remove the baking dish from the oven and let cool for 20 minutes. If you don't eat right away, wrap each slice or the whole cake with plastic wrap. Store at the cool place and enjoy within 2-3 days.

4/7/2017用了2个5寸的圆蛋糕模,175‘C烘烤35分钟

香蕉蛋糕
材料:
少许抹烤盘的奶油(我没抹油,也很容易脱模)
208g 低筋面粉/普通面粉
1/4茶匙 海盐
½茶匙 小苏打
½茶匙 泡打粉
113克 无盐奶油,软化
50克 有机蔗糖
2个大鸡蛋,室温
1汤匙 植物油(玉米油,米糠油,葡萄籽油)
1茶匙 香草精 (我没有放)
3-4条 熟的香蕉(约200g)
½ - ⅔杯 葡萄干(我没有放)

另外1条香蕉,切片,铺在蛋糕面糊上面

做法:
1)预热烤箱至350°F(175°C),并用奶油(底部和侧面)涂上一个8“方形烤盘。
2)在一个大碗中,混合面粉,海盐,小苏打和泡打粉。
3)在另一个碗中,将软化的奶油和糖搅拌均匀。
4)然后加入鸡蛋,植物油和香草精,搅拌均匀。
5)用叉子把香蕉压成泥,加入蛋糊中,拌匀。
6)把粉类加入到香蕉蛋糊中,用橡皮刮刀,轻拌混合。 (不要过度搅一面起筋)
把葡萄干加入(可不放)
7)将面糊倒入准备好的蛋糕模,用橡皮刮刀把表面抹平。将1条香蕉切片,装饰在香蕉面糊上。
8)送入已经预热175°C的烤箱里烘烤约1小时。 (如果分2个蛋糕模烘烤的话,时间可以缩短,烤35分钟即可),用竹签插入蛋糕,出来是干净的就是熟透了。如果表面不够上色,可以把烤盘移至上层,让蛋糕快速上色。
9)从烤箱中取出烤盘,待凉20分钟。如果不立即享用,用塑料包裹每片或整个蛋糕。存放在阴凉处,2-3天内享用。

snoopy bento 史努比便当

Minced meat Tofu
Ingredients:
100g minced meat
1 box organic soft tofu
some carrot
1 cloves garlic
2 small scallion
1 tsp liquid amino
Some oil
Dash of pepper powder
1tsp corn flour+2 tbsp water

Steps:
1) crush the garlic and scallion, slice the carrot
2) heat pan, add some oil. sauteed garlic and scallion till fragrant then add in minced meat and stir fry.
3) add in carrot and tofu and continue stir frying.
4) add 1/4 cup of water and cook till boiling.
5) add in liquid amino and dash of pepper powder. add in the corn flour mixture to thicken the sauce.
6) off fire and done.

肉碎豆腐
材料:
100g 豬絞肉/肉碎
1盒 有機軟豆腐
一些 胡蘿蔔
1片 蒜米
2粒 小蔥頭
1茶匙 液體氨基
一些 植物油
胡椒粉 適量
1茶匙 玉米粉+ 2湯匙水

做法:
1)剁碎蒜米和小蔥頭,胡蘿蔔切片。
2)把鍋加熱,倒入一些油, 蒜米和小蔥頭碎炒香,然後加入豬絞肉拌炒。
3)加入胡蘿蔔和豆腐,繼續拌炒。
4)加入1/4杯水,煮至沸騰。
5)加入液體氨基和胡椒粉。然後加入玉米粉混合物,煮至濃稠。
6)熄火,完成。


昨天没有用完的杏仁燕麦饼干面团,今天做成手指饼干形状。

Bake potato cheese egg 烤馬鈴薯蛋餅 14/7/2017

Baked Potato Cheese Egg
Ingredients:
1 egg
1 potato
1 tbsp fresh milk
1 slice of cheese / cheddar slice / shredded mozarella
Pinch of pepper powder

some vegetables (optional)

Steps:
1) peel, slice and boil the potato for 5 mins till can be poked by fork.
2) Grease a small baking dish with some butter (13.5cm skillet I used) or use aluminium foil cups.
3) drain the cooked potato and pour into the lightly beat egg. Add in milk and dash of pepper powder and some vegetables at your choice, I add a little tiny sliced french bean.
4) pour the mixture into the baking dish and place a slice of cheese on top.(you can shred some cheddar cheese or mozarella cheese too)
5)  Bake in preheated oven at 180 deg C for about 30 minutes or to eggs are just set. Serve warm.

烤馬鈴薯蛋餅
材料:
1個大雞蛋(打散)
1粒馬鈴薯
1湯匙 鮮奶
1片芝士/切達切片/莫扎里拉奶酪絲
胡椒粉 適量

一些蔬菜(可選擇放入適量的菠菜或羅勒葉。)

做法:
1)將馬鈴薯剝皮,切片,放入滾水里煮5分鐘或直到可以用叉子戳入。
2)在一個小烤盤(我用的是13.5厘米煎鍋)抹上奶油,或使用鋁箔杯也可。
3)稍微冷卻了的馬鈴薯加入打散的蛋液,加入牛奶和胡椒粉和一些喜歡的蔬菜。 (我加的是少許切片的四季豆)
4)將混合蛋液倒入烤盤中,將一片奶酪放在上面(也可撒些切達奶酪絲或莫扎里拉奶酪絲)
5)送人預熱烤箱攝氏180度烤約30分鐘或至剛熟即可趁熱享用。

冷吃或热吃都没有问题哦!
配上蒜香蜜烤鸡翅膀和炒鲜蔬。

12/7/2017 Invisible cake 蘋果隱形蛋糕

Good Day Dear All~
WE have a different type of breakfast today. I baked this Invisible Apple Cake for everyone at home.  I would say it is very yummy and the sweetness is just nice as i did reduce sugar from the original recipes from internet. Little Princess is having it at home and mommy is having it at work. ^.^ 

Lunch Bento is simple Garlic Fried Rice with blue pea flower, corn flakes meat balls and soy sauce eggplant+okra.

Teatime today is BLUE also....Blue Pea Flower coconut agar-agar. 


無敵簡單 - 蘋果隱形蛋糕

最近在國外掀起一股熱潮的神奇甜點,原來是指水果佔90%,蛋糕只佔10%的健康甜點。名字來自於水果比例多到把蛋糕都隱形了,超級清爽少油少麵粉,而且無敵簡單絕對不會失敗! (配方是參考網路上的食譜)
材料:

蘋果2-3顆,香草精一小匙,雞蛋2顆,有機砂糖35克,無鹽奶油20克,低筋麵粉70克,泡打粉1茶匙,鹽一小撮,鮮奶100克

1)將雞蛋打入鋼盆裡,加入砂糖和香草精用手攪拌器拌均勻至起泡。
2)奶油先加熱融化,加入鮮奶和融化的奶油拌勻。
3)加入過篩的低筋麵粉和泡打粉,慢慢加入麵糊裡攪拌均勻,記得將麵糊慢慢拌勻至沒有結塊。
4)烤箱預熱200度,接著用切片器將蘋果削成薄片,放入麵糊中讓麵糊均勻裹上蘋果片,再將蘋果片旋轉層層排列至烤模中。
5)將剩下的麵糊全部慢慢倒入烤模中,輕輕在桌上敲一下以避免小氣泡,接著烤箱200度烤約40-45分鐘
6)烤至表面金黃後,用細竹籤插入蛋糕體若不沾黏就代表已經熟透,出爐就完成囉!


這款隱形蛋糕的口感吃起來有滿滿的水果香
蘋果片之前還隱約的可以吃到烤布丁口感的麵糊
蛋糕表面可以撒一些糖粉/烤香的杏仁片與燕麥/淋上楓糖漿/搭配一球香草冰淇淋是沒問題的喔!
風靡法國的蘋果隱形蛋糕,入口綿軟又果香馥郁! ! !贊!贊!贊!


Gâteau Invisible, AKA Invisible Apple Cake
Ingredients:
2-3 apples
(such as fuji or pink lady. I used organic apple)
2 eggs
35g organic cane sugar
100g fresh milk
20g melted butter
70g flour
1 tsp aluminium free baking powder 

Steps:
1) Preheat oven to 200˚C.
2) Peel the apples and remove the core. Slice them very thinly. Soak them in lemon water so it won’t oxidized.
3) In a medium bowl, whisk the eggs and sugar until pale. Add milk and melted butter and mix well. Sift in the flour and baking powder to combine. Add the sliced apples. Using a rubber spatula, coat them well with the batter.
4) In a parchment paper-lined pound cake mold, pour in the batter.  Tap on table to remove excess air. Bake them 40-45mins.
5) Take out from the mold once it is cool to touch.


You may sprinkle some icing sugar on the cake / roasted almond flakes / oatmeal / served with an ice cream / with some maple syrup... it is yummy in any way you eat!!!!

今日的便当

今天早上忙着弄燕菜,苹果蛋糕,竟然不够时间做便当。只好做个普通的造型就收工咯!哈哈。。今天的肉丸很好吃呢!加入了些corn flakes.
日式蒜香炒飯
(寶寶雙人份):
材料:
米糠油 1 湯匙
蒜米 2-3 瓣,剁碎/切片(依據喜好切顆粒也行)
雞蛋 1 粒
胡蘿蔔碎 2-3湯匙(非常碎那種)
熟日本米飯 1 碗
醬油 1/2 茶匙
鹽 適量
胡椒粉 適量
"今天我加了一些蘭花汁,飯成藍色了“

**** 關鍵是米飯和蒜蓉要分開炒 ****

做法:
1. 熱油。蒜蓉爆香後,先放一邊備用。
** 注意火候,蒜蓉容易炒焦哦!
2. 用回同樣的熱油,倒入胡蘿蔔碎粒,炒幾秒,加入白飯翻炒1分鐘。
 3. 打入雞蛋,快速翻炒讓每顆飯粒都沾上蛋液。加入醬油、鹽少許及胡椒粉調味。
4. 把剛剛爆香好的蒜蓉倒入鍋中, 再翻炒1分鐘。
5. 蒜香炒飯就完成啦!

Japanese garlic fried rice
Ingredients:
(2 Baby servings):
1 tbsp rice bran oil
Garlic 2-3 cloves, chopped / sliced (according to the preferences)
1pc of Egg
2-3 tbsp crushed carrots (very fine)
1 bowl of Cooked Japanese rice
1/2 tsp Liquid amino / light Soy sauce
pinch of sea salt
dash of Pepper powder
"i added some blue pea flower water today which it turned blue"
The success key is  ~  rice and garlic to be fried separately

Steps:
1. In a heated large wok or pan, add in 1 tbsp veg oil and minced garlic. Fry the garlic at medium low heat until golden brown. Keep an eye on them as they brown quickly in a matter of seconds. separate the garlic aside.
2. With the same hot oil, pour in the crushed carrot, fry a few seconds, add in the rice and stir fry 1 minute.
  3. Add in the egg, stir quickly so that every grain of rice are coated with egg. Add in liquid amino/soy sauce, salt and pepper to taste.
4. Add in the sauteed garlic and continue to stir fry 1 minute.
5. garlic fried rice is done, serve immediately or warm.

玉米片肉丸
材料:
100g豬肉肉
1/3杯玉米片
1粒小紅蔥頭
1/2茶匙液體氨基
鹽少許
胡椒粉少許
幾滴芝麻油
1/2蛋白

做法:
1)切碎紅蔥頭,用油炒至香味。
2)用手榨碎玉米片。
3)將所有的材料包括(1)和(2)放入一個中等的碗,用筷子將肉泥以同1個方向攪拌至粘稠。
4)用小茶匙輔助舀起肉漿在手心揉成圓球狀。(稍微濕的手比較容易)
5a)煎:把每粒肉丸沾上少許玉米粉,用小火兩面煎到熟透即可。
5b)蒸:把每粒肉丸一一擺進蒸盤裡,中火蒸10分鐘。

Corn Flakes Meat Balls
Ingredients:
100g minced meat
1/3 cup corn flakes
1/2 tsp liquid amino
pinch of salt
pinch of pepper powder
1 scallion
few drops sesame oil
1/2 egg white

Steps:
1) cut and chop the scallion, stir fry with some oil till fragrance. set aside.
2) crush the corn flakes by hand. set aside.
3) put all ingredients including 1) and 2) in a medium ball and use chopsticks to stir the mixture in 1 direction till gluey.
4)use 1 tsp spoon to scoop the mixture, roll into balls ( damn your hands for easier handling)
5a) place the balls on a plate (if steaming is preferred), steam for 10 mins in medium heat. 
5b) coat each ball with some corn flour, pan fry or deep fry till golden brown



蘭花椰香果凍/燕菜
材料:
(藍色部分)
6-7朵乾蘭花
310ml 清水
1茶匙 燕菜粉
1/4茶匙 果凍粉
25-30克 砂糖

(白色部分)
100g 濃椰漿
200ml 清水
1茶匙 燕菜粉
1/4茶匙 果凍粉
25-30克 砂糖

做法:
1)首先把所有白色部分的材料放入一個小鍋,攪拌均勻用後用小火煮沸。
2)把一半的分量倒入模具,送入冰箱速凍。
3)等待同時,把藍色部分的材料全部放入另外一個小鍋,攪拌均勻用後用小火煮沸。把蘭花夾出。
4)把模具從冰箱取出,用牙籤在燕菜表面輕刮一些條紋。然後把煮好的蘭花燕菜倒入。送進冰箱再次速凍。
5)大約15分鐘後,把剛才倒剩的椰漿燕菜,開小火再煮一煮至融化即可(不需煮沸)。
6 )再把模具從冰箱取出,用牙籤在蘭花燕菜表面輕刮一些條紋。然後把椰漿燕菜倒入。包好保鮮膜,放入冰箱冷藏直到凝固。

Blue Pea Flower Agar-agar
Ingredients:
(A: Blue portion)
6-7 dried blue pea flower
310ml water
1 tsp  Agar-agar powder
1/4 tsp instant jelly powder
25-30 grams of sugar

(B: White portion)
100g thick coconut milk
200ml of water
1 tsp  Agar-agar powder
1/4 tsp instant jelly powder
25-30 grams of sugar

Steps:
1) Start with the white portion, put all ingredients B into a small pot, mix well and bring to a boil.
2) pour half of the ingredients B into a mould, then put in the fridge for a faster cooling.
3) While waiting for it harden, put all the ingredients A into another small pot, mix well and bring to a boil too. Take out the dried flower.
4) Take out the mould from the fridge and use a toothpick to lightly scratch on the harden surface of the coconut agar-agar. Pour in the blue pea flower agar-agar. Return the mould to the fridge again.
5) after 15 minutes, reheat the remaining coconut agar-agar by cooking under small fire till no more harden parts.
6) Remove the mould again from the fridge, repeat the scratching step then pour in all the coconut agar-agar. Wrap with cling wrap and store in the fridge till completely harden before serving.


I am using Japanese Agar-agar and Instant Jelly powder

6 July 2017 皮卡丘便當 + sweet potato chips

Happy Thursday!

Breakfast: wholemeal bread with cheese slice and fresh milk
Lunch: pasta with white sauce, onion meat.patties, broccoli and edamame
Teatime: steamed onion juice and Sugarless & eggless sweet potato chips



昨天家婆拿了一個小叔以前的玩偶給小公主,原來是皮卡丘! 小公主很喜歡。 。 。於是今天做了個皮卡丘的便當給她。由於她今天想吃通心粉,所以不能像飯糰般捏出皮卡丘的造型。只好用蛋黃煎成黃色蛋皮,再剪出形狀。

便當裡有:-
白醬通心粉
洋蔥肉餅
水煮青花菜和枝豆

五官:紫菜
Pokeball: 蛋白,紫菜,番茄

洋蔥肉餅
材料:
肉碎100克,洋蔥1/2粒,胡椒粉少許,麻油1/2茶匙,醬油1茶匙(我用liquid amino) , 燕麥5克(rolled oat),太白粉1茶匙。

做法:
燕麥用熱水浸泡15分鐘,隔掉水分,待用。洋蔥切粒,用少許油炒軟,待冷。然後把所有材料放在一個碗裡,順時鐘攪拌至起膠。分成5等分,用濕的雙手,搓成球狀壓扁。煎至兩面金黃色即可。

Onion Meat patties
Ingredients:
100g Minced Meat
1/2pc onion
pepper powder
1/2 tsp sesame oil
1 tsp soy sauce (I use liquid amino)
5g rolled oat
1 tsp potato starch

Steps:
1) Soak the Oatmeal in hot water for 15 minutes, sieve away the water, set aside.
2) Dice the onion and pan fry with some oil till soften and fragrance, cool and set aside.
3) Put all ingredients in a bowl and use chopsticks to stir in one direction till mixture is gluey.
4) Divide the meat mixture into 5 portions, with wet hands, roll meat into balls and flatten a bit, pan fry till both sides turn golden brown.

How to boost immune system by natural way?
Steam Onion Juice
suitable for little one who is suffering from flu and cough
8-12mo once daily (1 onion)
12mo above twice daily (1 onion)
(result might be vary to different people)


Steam Onion Juice
Ingredients:
2 big Onion

Steps:
1) peel and cut onion
2) put onion in a bowl
3) put the bowl in the steamer and steam for 15mins high heat, then turn low heat and continue steaming for 45mins
4) cool down and sieve through a coffee strainer
5) ready to serve

提高寶寶免疫系統的~洋蔥水
材料:
2 粒大洋蔥

做法:
1)洋蔥去皮切塊。
2)把洋蔥放進碗裡。
3)大火蒸15分鍾,然後轉小火蒸45分鍾。
4)待涼後,用網濾篩出洋蔥汁。

寶寶咳嗽傷風時的天然食療,平時飲用也可以哦。 
(效果因人而異)
8-12個月的寶寶一天可以喝一次
(每次1粒洋蔥的份量)
12個月以上的寶寶可以喝兩次
(每次1粒洋蔥的份量)


Sugarless & Eggless Sweet Potato Chips
Ingredients:
100g cooked sweet potato
35g potato starch
10g rolled oat
5g unsalted butter / olive oil(for 1yo below)

Steps:
1) boil 1 medium size  sweet potato (with skin on) in water, cook for 15mins or till can be poked in by fork. (you may skip this if you have frozen mashed sweet potato as I always do) Peel and mash the sweet potato with a fork.
2) While cooking the sweet potato, soak the rolled oat with hot water for 10 mins, then sieve away the water, set aside.
3) in the mixing cup, add in mashed potato, soaked rolled oat and butter. Use hand blender / blender to blend them till smooth
4) add in potato starch and stir well, then transfer it into a plastic bag, cut a hole at the edge (5mm size) then start squeezing the batter (about 1 cm pile size) on parchment paper/non stick baking sheet (pic 1-2), squeeze another with large gap (about 2 inches) between batter
5) place another sheet of parchment paper / non stick baking sheet to cover the squeezed batters (pic 3-4)
6) use you hand gently press on each batter, then use a flat bottom surface bowl or anything to press the batters gently. (pic 5-6) ( as I am using a casserole bowl, I just put the bowl on top of each batter, they are nicely pressed down with the bowl weight, I didn't use any force)
7) bake at preheated oven of 160'C for 5 mins, remove baking tray from oven. Gently remove the top parchment paper/non stick baking sheet. (pic A below)
8) return the baking tray to the oven and continue baking for 5-8 mins or till the sides start turning brown.

我用的是砂鍋碗
I am using a casserole bowl



烘烤一半,把上面的不沾烤布拿开,继续烘烤。
half way, to take out the parchment paper on top, then continue baking.

在不沾黏烤紙上擠出大約1公分的小團,間隔大約5-6公分的空間,再擠出麵糊。
start squeezing the batter (about 1 cm pile size) on parchment paper/non stick baking sheet 

無糖無蛋番薯片
材料:
100克熟的番薯泥
35克太白粉
10克 有機燕麥
5克有機蔗糖
5克無鹽奶油(橄欖油:1歲以下)

做法:
1)首先蒸熟或煮熟一​​​​​​粒番薯,待涼後,稱出所要的重量,壓泥。
2)用熱水浸泡燕麥10分鐘後,過篩掉水分,待用。
3)把番薯泥,浸泡後的燕麥和奶油/橄欖油加入攪拌器/用料理棒,攪拌幼滑。
4) 加入太白粉,用湯匙攪拌均勻就可以了。
5) 把麵糊倒入一個膠袋子裡,剪個小洞。
6)在不沾黏烤紙上擠出大約1公分的小團,間隔大約5-6公分的空間,再擠出麵糊。 (圖1-2)
7)取另外一張不沾黏烤紙,覆蓋在擠出的麵糊上面(圖3-4)
8)用手指輕壓在每一個麵糊上面,然後用一個底部平坦的碗/東西,壓在每一個麵團上面。 (圖5-6)(我用的是砂鍋碗,我只是放在每一個麵團上面而已,碗的重量自然地壓平麵團,我並沒有用力壓)
9) 送進已經預熱的烤箱160'C, 烤5分鍾, 然後取出烤盤,輕取上面那張不沾黏烤紙(圖A)
10)繼續烘烤5-7分鐘;或看見餅乾邊緣開始上色即可。
11)重複做法5-9直到所有麵糊烤完。

備註:
給比較小的寶寶,可以不需要烤到完全乾燥。看見餅乾開始上色即可取出,餅乾帶少許酥軟。

丙烯酰胺是生產聚丙烯酰胺的原料。聚丙烯酰胺主要用於水的淨化處理、紙漿的加工及管道的內塗層等。澱粉類食品在高溫(120℃以上)烹調下容易產生丙烯酰胺。丙烯酰胺可見於吸煙、經高溫加工處理的澱粉食品及飲用水中。 2002年4月瑞典國家食品管理局和斯德哥爾摩大學研究人員率先報導,在一些油炸和燒烤的澱粉類食品中檢出丙烯酰胺,而且含量超過飲水中允許最大限量的500多倍。之後多國家也相繼報導了類似結果。


製作烤肉、醃肉易產生致癌物已不是稀奇之事,然而香港食物安全中心近日發表的《首個總膳食研究報告》卻稱,炒蔬菜也可能致癌。因為在高溫炒製的過程中,蔬菜中的氨基酸和還原糖發生美拉德反應,釋放出令人致癌的丙烯酰胺,且炒菜時間越長、溫度越高,釋放出的丙烯酰胺就越多。



油炸食物會致癌

2012年8月,美國《國家癌症研究雜誌》報導,炸薯條等油炸澱粉類食物會產生一種稱為丙烯酰胺的成分,可能會致癌。瑞典科學家也證實,炸薯條、炸洋芋片等高溫油炸或烘烤的澱粉類食物,含有大量丙烯酰胺,會增加多種癌症發病的風險。

根據目前各國提供的數據,富含丙烯酰胺的食品主要有炸薯條、炸薯片、爆玉米花、咖啡、餅乾、麵包、蛋糕、炸雞等等。另外,世界衛生組織對17個國家的調查發現,人體攝入的丙烯酰胺主要來源的食品為炸薯條16%~30%,炸薯片6%~46%,咖啡13%~39%,餅乾10%~20%,麵包10%~30%,其餘均小於10%。


熱鍋滾油炒蔬菜會致癌

2013年8月,香港食物安全中心發布的一份研究報告稱,在對肉類、蔬菜、豆類及麥製品等共133種食物進行檢測後發現,樣本中47%的食物含有可能令人致癌的丙烯酰胺,其中讓人大跌眼鏡的是蔬菜及其製品的丙烯酰胺含量排第二位,僅次於零​​食類食品。該中心又對22種蔬菜樣本進行測試,發現炒菜時間越長、溫度越高,蔬菜釋放出的丙烯酰胺就越多,加入食用油炒和乾炒的檢測結果無異。


在送檢的蔬菜中,西葫蘆高溫加熱後釋放出的丙烯酰胺最多,其次為大蒜、洋蔥,緊隨其後的是空心菜、燈籠椒、茄子、芥藍、絲瓜、西芹、芥菜,而生菜、菠菜、莧菜在炒製後釋放出的丙烯酰胺較少。

Acrylamide, a cancer-causing and potentially neurotoxic chemical, is created when carbohydrate-rich foods are cooked at high temperatures, whether baked, fried, roasted, grilled or toasted.

Some of the worst offenders include potato chips and French fries, but many foods cooked or processed at temperatures above 250 F/120 C may contain acrylamide.

As a general rule, the chemical is formed when food is heated enough to produce a fairly dry and brown/yellow surface … so if you're eating cooked foods that contain this characteristic, even if it was once a "healthy" natural food, like a sweet potato, it could be increasing your risk of cancer significantly.

WARNING: Some Potato Chips Contain Acrylamide in Levels 900 Times Over the Legal Limit

Acrylamide forms from a reaction between sugars and an amino acid (asparagine) during high-temperature cooking. While many foods – from coffee and breakfast cereal to bread – contain it, the highest levels have been detected in starchy plant-based foods, particularly French fries and potato chips. The federal limit for acrylamide in drinking water is 0.5 parts per billion, or about 0.12 micrograms in an eight-ounce glass of water.

However, a six-ounce serving of French fries can contain 60 micrograms of acrylamide, or about 500 times over the allowable limit.

Similarly, potato chips are notoriously high in this dangerous chemical. So high, in fact, that in 2005 the state of California actually sued potato chip makers for failing to warn California consumers about the health risks of acrylamide in their products. A settlement was reached in 2008 when Frito-Lay and several other potato chip makers agreed to reduce the acrylamide levels in their chips to 275 parts per billion (ppb) by 2011, which is low enough to avoid needing a cancer warning label.iii

Can You Reduce Your Exposure to Cancer-Causing Acrylamide?

Acrylamide levels vary greatly among processed foods, even among different batches of the same food item. The chemical has so far only been found in foods heated above 250 F/120 C, which includes most processed foods. Basing your diet on whole foods, with the majority or a significant portion eaten raw or only lightly cooked is therefore one of the best ways to avoid this cancer-causing cooking by product.

For the times when you do cook your food, here are some tips to keep in mind:
  • Frying, baking and broiling appear to be the worst offenders, while boiling or steaming appear to be much safer
  • Longer cooking times increase acrylamide, so the shorter the duration of cooking, the better
  • Soaking raw potatoes in water for 15-30 minutes prior to roasting may help reduce acrylamide formation during cooking
  • The darker brown the food, the more acrylamide it contains (for instance, dark brown toast compared to light brown toast)
  • Acrylamide is found primarily in plant-based foods, such as potatoes and grain products (not typically in meat, dairy or seafood)
  • In addition, the HEATOX scientists discovered that you're far less likely to ingest dangerous levels of the toxin when you eat home-cooked foods compared to industrially or restaurant-prepared foods. And when you do eat at home, the best advice they could give was to avoid overcooking your food.

Bento of the day


I baked in 2 pcs 5" round pan today

Banana Cake
Ingredients
½ Tbsp. butter for greasing the baking dish (i didn't)
1 ⅔ cups (208g) all-purpose flour
½ tsp. salt (i put 1/4tsp)
½ tsp. baking soda
½ tsp. baking powder
½ cup (113 g) butter, soften
50g cane sugar
2 large eggs, at room temperature
1 Tbsp. cooking oil (vegetable, canola, grapeseed oil)
1 tsp. vanilla extract
3-4 ripe bananas (about 200g)
½ - ⅔ cup raisins (optional)
1 additional banana for topping

Steps:
1) Preheat oven to 175°C and grease an 8” square baking dish with butter (bottom and sides).
2) In a bowl, combine flour, salt, baking soda and baking powder and whisk all together.
3) In another bowl, combine soften butter and sugar and whisk well.
4) Add eggs, oil, and vanilla extract and beat with the whisk until well blended.
5) Mash bananas with a fork and mix into the egg mixture.
6) Add the flour to the banana mixture and stir just until blended. Add raisins, if you prefer.
7) Pour the batter into the prepared pan, spreading it evenly with the rubber spatula. Slice 1 banana thinly into rounds and decorate on top of the banana bread.
8) Put the pan in the oven and bake at 175°C until a toothpick inserted into the center of the bread comes out clean, about 1 hour.
9) Remove the baking dish from the oven and let cool for 20 minutes. If you don't eat right away, wrap each slice or the whole cake with plastic wrap. Store at the cool place and enjoy within 2-3 days.

今天用了2个5寸的圆蛋糕模,175‘C烘烤35分钟

香蕉蛋糕
材料:
少许抹烤盘的奶油(我没抹油,也很容易脱模)
208g 低筋面粉/普通面粉
1/4茶匙 海盐
½茶匙 小苏打
½茶匙 泡打粉
113克 无盐奶油,软化
50克 有机蔗糖
2个大鸡蛋,室温
1汤匙 植物油(玉米油,米糠油,葡萄籽油)
1茶匙 香草精 (我没有放)
3-4条 熟的香蕉(约200g)
½ - ⅔杯 葡萄干(我没有放)

另外1条香蕉,切片,铺在蛋糕面糊上面

做法:
1)预热烤箱至350°F(175°C),并用奶油(底部和侧面)涂上一个8“方形烤盘。
2)在一个大碗中,混合面粉,海盐,小苏打和泡打粉。
3)在另一个碗中,将软化的奶油和糖搅拌均匀。
4)然后加入鸡蛋,植物油和香草精,搅拌均匀。
5)用叉子把香蕉压成泥,加入蛋糊中,拌匀。
6)把粉类加入到香蕉蛋糊中,用橡皮刮刀,轻拌混合。 (不要过度搅一面起筋)
把葡萄干加入(可不放)
7)将面糊倒入准备好的蛋糕模,用橡皮刮刀把表面抹平。将1条香蕉切片,装饰在香蕉面糊上。
8)送入已经预热175°C的烤箱里烘烤约1小时。 (如果分2个蛋糕模烘烤的话,时间可以缩短,烤35分钟即可),用竹签插入蛋糕,出来是干净的就是熟透了。如果表面不够上色,可以把烤盘移至上层,让蛋糕快速上色。
9)从烤箱中取出烤盘,待凉20分钟。如果不立即享用,用塑料包裹每片或整个蛋糕。存放在阴凉处,2-3天内享用。
